Description
5 Ingredient Beef Enchiladas are a simple, flavorful meal that combines seasoned beef, zesty salsa, and melted cheese wrapped in soft tortillas. This easy-to-make dish is perfect for busy weeknights or a quick family dinner that doesn’t skimp on flavor.
Ingredients
Main Ingredients
- 1 lb lean ground beef
- 1 cup chunky salsa
- 1 (10-ounce) can red enchilada sauce
- 8 (8-inch) tortillas (flour or corn)
- 8 oz (about 2 cups) shredded Four Cheese Mexican blend
Instructions
- Preheat Your Oven:
Preheat your oven to 350°F (175°C). Lightly spray a 9×13-inch baking dish with nonstick cooking spray. - Prepare the Beef Filling:
Brown the ground beef in a large skillet over medium-high heat. Drain any excess fat and return the beef to the skillet. Stir in the salsa and cook over medium-low heat until heated through. Remove from heat. - Assemble the Enchiladas:
Pour half of the enchilada sauce into the bottom of the prepared baking dish. Warm the tortillas according to package instructions to make them easier to roll. Place about 1/4 cup of the beef mixture in the center of each tortilla and sprinkle with shredded cheese. Roll the tortillas tightly and place them seam side down in the baking dish. - Add the Sauce and Cheese:
Pour the remaining enchilada sauce over the rolled tortillas, ensuring they’re well coated. Sprinkle the remaining shredded cheese over the top. - Bake to Perfection:
Cover the dish with aluminum foil and bake for 30–35 minutes, or until the cheese is melted and bubbly and the enchiladas are heated through. - Serve and Enjoy:
Let the enchiladas cool for 5 minutes before serving. Top with sour cream, guacamole, or chopped cilantro, if desired.
Notes
- Warm the tortillas before rolling to prevent cracking.
- Add extra ingredients like black beans, corn, or diced green chilies to customize the filling.
- You can make these enchiladas ahead of time by assembling them and refrigerating until ready to bake.
