  • 8 (8-inch) tortillas (flour or corn)

Instructions

  1. Preheat Your Oven:
    Preheat your oven to 350°F (175°C). Lightly spray a 9×13-inch baking dish with nonstick cooking spray.
  2. Prepare the Beef Filling:
    Brown the ground beef in a large skillet over medium-high heat. Drain any excess fat and return the beef to the skillet. Stir in the salsa and cook over medium-low heat until heated through. Remove from heat.
  3. Assemble the Enchiladas:
    Pour half of the enchilada sauce into the bottom of the prepared baking dish. Warm the tortillas according to package instructions to make them easier to roll. Place about 1/4 cup of the beef mixture in the center of each tortilla and sprinkle with shredded cheese. Roll the tortillas tightly and place them seam side down in the baking dish.
  4. Add the Sauce and Cheese:
    Pour the remaining enchilada sauce over the rolled tortillas, ensuring they’re well coated. Sprinkle the remaining shredded cheese over the top.
