Chicken and Rice Bake

  • 800 ml hot water (approximately, 2 parts water per part rice) 
  • Salt to taste 
  • Turmeric (to taste) 
  • Oregano (to taste) 
  • Aluminum foil (for covering the baking dish) 

Instructions 

  1. Preheat the Oven
  • Preheat your oven to 375°F (190°C). 
  1. Prepare the Chicken
  • Warm some olive oil in a large skillet over medium-high heat. 
  • Sprinkle the chicken thighs with salt, pepper, and paprika for seasoning. 
  • Fry the chicken thighs in the skillet until they are golden brown on both sides, about 5-7 minutes per side. Remove the chicken and set aside. 
  1. Prepare the Vegetables
  • Toss in the minced garlic and sauté for about a minute until it becomes fragrant. 
  • Add the finely chopped onion, diced carrot, green beans, bell pepper, and canned corn.  
  • Sauté for 5-7 minutes until the vegetables begin to tenderize.
