Korean Street Toast (Cabbage Egg Sandwich) 

Korean Street Toast, also known as Cabbage Egg Sandwich, is a popular street food in Korea. This delicious and simple sandwich is made with a combination of shredded vegetables, an egg, and slices of cheese, all packed between slices of bread and topped with a tasty sauce.  

Ingredients 

For the Sandwich: 

  • Cabbage, finely shredded 
  • Carrot, finely shredded 
  • Spring onion, chopped 
  • 1 egg 
  • Slices of cheese 
  • Bread slices 
  • Butter (for toasting) 

For the Sauce: 

  • Ketchup 
  • Mayonnaise 

Instructions 

  1. Prepare the Vegetables
  • Finely shred the cabbage and carrot. Chop the spring onion. 
  1. Make the Egg Mixture
  • In a bowl, combine the shredded cabbage, shredded carrot, and chopped spring onion. 
  • Crack the egg into the bowl and mix well until all the vegetables are coated with the egg. 
  1. Cook the Egg and Vegetable Mixture
  • Heat a small amount of butter in a frying pan over medium heat. 
  • Pour the egg and vegetable mixture into the pan and spread it out evenly to form a thick pancake. 
  • Cook until the bottom is golden brown, then flip and cook the other side until it is also golden brown and the egg is fully cooked through. 
  1. Toast the Bread
  • While the egg and vegetable mixture is cooking, heat another pan or a griddle over medium heat. 
  • Butter the bread slices on one side and place them, buttered side down, on the hot pan. 
  1. Assemble the Sandwich
  • Place a slice of cheese on one of the toasted bread slices. 
  • Place the cooked egg and vegetable mixture on top of the cheese. 
  • Spread a mixture of ketchup and mayonnaise on the other slice of toasted bread. 
  • Place the bread slice with the sauce on top of the egg and vegetable mixture to form a sandwich. 
  1. Serve
  • Divide the sandwich into two halves and present it while it’s still warm.
