Best Healthy No-Bake Summer Dessert! Sugar-Free & Vegan!

Ingredients: 

  • Base Layer: 
  • 150 g / 5.3 oz sunflower seeds 
  • 200 g / 7 oz dates 
  • 1-2 tbsp cocoa powder (optional) 
  • Cream Layer: 
  • 140 g / 5 oz raw cashew nuts 
  • 150 ml coconut milk 
  • 30 ml coconut oil 
  • 2-3 tbsp maple syrup 
  • Decoration: 
  • Melted chocolate 
  • Nuts 

Instructions: 

  1. Prepare the Base Layer: 
  • Soak the dates in warm water for about 10 minutes to soften them, then drain. 
  • In a food processor, blend the sunflower seeds until they are finely ground. 
  • Add the soaked dates and cocoa powder (if using) to the food processor. Process until the mixture becomes sticky and holds its shape when pressed together. 
  • Press the mixture into the bottom of a lined baking pan to form an even base layer. Place the pan in the refrigerator to chill while you prepare the cream layer. 
  1. Prepare the Cream Layer: 
  • Soak the raw cashew nuts in hot water for at least 15 minutes, then drain. 
  • In a blender or food processor, combine the soaked cashews, coconut milk, coconut oil, and maple syrup. Process until the mixture achieves a smooth and creamy consistency. 
  • Pour the cashew cream over the chilled base layer, spreading it evenly. Place the pan back in the refrigerator and chill for at least 2 hours, or until the cream layer is firm. 
  1. Decorate: 
  • Once the dessert is set, drizzle melted chocolate over the top and sprinkle with nuts for decoration.
