  • 1 tea glass water (90ml)
  • 1 teaspoon salt (8g)
  • 500g all-purpose flour (approximately 4 cups)

For the Filling:

  • 2 onions, finely chopped
  • A handful of finely chopped green onion tops
  • 500g spinach, chopped
  • A pinch of parsley, chopped
  • Salt and pepper, to taste

Instructions

  1. Prepare the Filling:

    • Heat oil in a pan over medium heat.
    • Sauté the onions and green onion tops until soft and translucent.
    • Add chopped spinach and cook until wilted (about 5 minutes).
    • Stir in parsley and season with salt and pepper. Let the filling cool.
  2. Prepare the Dough:

    • In a large bowl, combine kefir, water, and salt.
    • Gradually add flour, mixing until a dough forms.
    • Knead the dough on a floured surface for 5–7 minutes until smooth.
    • Cover with a damp cloth and let it rest for 30 minutes.
  3. Assemble the Pastries:

    • Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
    • Divide the dough into equal balls. Roll each ball into a flat circle.
    • Place a spoonful of filling in the center, fold into a half-moon shape, and seal the edges.
  4. Bake the Pastries:

    • Arrange pastries on the baking sheet.
    • Brush with oil or egg wash for a golden finish.
    • Bake for 20–25 minutes or until golden brown and crispy.
  5. Serve:

    • Let pastries cool slightly, then serve warm with dips or a side salad.
