Ingredients

- 1 tea glass water (90ml)
- 1 teaspoon salt (8g)
- 500g all-purpose flour (approximately 4 cups)

- 2 onions, finely chopped
- A handful of finely chopped green onion tops
- 500g spinach, chopped
- A pinch of parsley, chopped
- Salt and pepper, to taste

- Heat oil in a pan over medium heat.
- Sauté the onions and green onion tops until soft and translucent.
- Add chopped spinach and cook until wilted (about 5 minutes).
- Stir in parsley and season with salt and pepper. Let the filling cool.

Prepare the Dough:
- In a large bowl, combine kefir, water, and salt.
- Gradually add flour, mixing until a dough forms.
- Knead the dough on a floured surface for 5–7 minutes until smooth.
- Cover with a damp cloth and let it rest for 30 minutes.

Assemble the Pastries:
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Divide the dough into equal balls. Roll each ball into a flat circle.
- Place a spoonful of filling in the center, fold into a half-moon shape, and seal the edges.

- Arrange pastries on the baking sheet.
- Brush with oil or egg wash for a golden finish.
- Bake for 20–25 minutes or until golden brown and crispy.
