Description

A deliciously unique African Chicken Peanut Stew that combines tender chicken, sweet potatoes, and green beans in a rich peanut sauce.


Ingredients

  • 2 tablespoons vegetable oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1 can (14 ounces) diced tomatoes, undrained
  • 1 cup chicken broth
  • 1 cup natural peanut butter
  • 1 cup sweet potatoes, peeled and diced
  • 1 cup green beans, trimmed and cut into 1-inch pieces
  • Salt and pepper to taste
  • 1/4 cup chopped fresh cilantro (for garnish)
  • Juice of 1 lime

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Stir in the minced garlic and grated ginger, cooking for an additional 1-2 minutes until fragrant.
  3. Add the ground cumin, ground coriander, smoked paprika, and cayenne pepper to the pot. Stir well to combine and cook for another minute.
  4. Add the chicken pieces to the pot, cooking until they are browned on all sides, about 5-7 minutes.
  5. Pour in the diced tomatoes and chicken broth, stirring to combine. Bring the mixture to a simmer.
  6. Stir in the peanut butter until fully incorporated. Add the diced sweet potatoes and green beans. Season with salt and pepper to taste.
  7. Cover the pot and let the stew simmer for 25-30 minutes, or until the sweet potatoes are tender and the chicken is cooked through.
  8. Remove from heat and stir in the lime juice. Serve hot, garnished with chopped cilantro.

Notes

  • For a thicker stew, reduce the amount of chicken broth.
  • For a vegetarian version, substitute chicken with chickpeas and use vegetable broth instead.
