Description
A deliciously unique African Chicken Peanut Stew that combines tender chicken, sweet potatoes, and green beans in a rich peanut sauce.
Ingredients
- 2 tablespoons vegetable oil
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon smoked paprika
- 1/2 teaspoon cayenne pepper (adjust to taste)
- 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
- 1 can (14 ounces) diced tomatoes, undrained
- 1 cup chicken broth
- 1 cup natural peanut butter
- 1 cup sweet potatoes, peeled and diced
- 1 cup green beans, trimmed and cut into 1-inch pieces
- Salt and pepper to taste
- 1/4 cup chopped fresh cilantro (for garnish)
- Juice of 1 lime
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and grated ginger, cooking for an additional 1-2 minutes until fragrant.
- Add the ground cumin, ground coriander, smoked paprika, and cayenne pepper to the pot. Stir well to combine and cook for another minute.
- Add the chicken pieces to the pot, cooking until they are browned on all sides, about 5-7 minutes.
- Pour in the diced tomatoes and chicken broth, stirring to combine. Bring the mixture to a simmer.
- Stir in the peanut butter until fully incorporated. Add the diced sweet potatoes and green beans. Season with salt and pepper to taste.
- Cover the pot and let the stew simmer for 25-30 minutes, or until the sweet potatoes are tender and the chicken is cooked through.
- Remove from heat and stir in the lime juice. Serve hot, garnished with chopped cilantro.
Notes
- For a thicker stew, reduce the amount of chicken broth.
- For a vegetarian version, substitute chicken with chickpeas and use vegetable broth instead.
