A delicious and crispy air fryer eggplant recipe that is easy to make and perfect as a side dish or snack.
Ingredients
- 2 medium eggplants, sliced into ½-inch rounds
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 2 tablespoons olive oil
- ¼ cup grated Parmesan cheese (optional)
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat the air fryer to 375°F (190°C).
- Place the sliced eggplant in a large bowl and sprinkle with salt. Let it sit for about 15 minutes to draw out excess moisture.
- Rinse the eggplant slices under cold water and pat them dry with paper towels.
- In a separate bowl, mix together the black pepper, garlic powder, onion powder, and smoked paprika.
- Drizzle the olive oil over the eggplant slices and toss to coat evenly. Sprinkle the spice mixture over the eggplant and toss again until well coated.
- Arrange the eggplant slices in a single layer in the air fryer basket, making sure they are not overcrowded. You may need to do this in batches.
- Cook in the air fryer for 12-15 minutes, flipping halfway through, until the eggplant is golden brown and tender.
- If using, sprinkle the grated Parmesan cheese over the eggplant during the last 2 minutes of cooking.
- Remove from the air fryer and garnish with fresh parsley before serving.

- For a spicy kick, add a pinch of cayenne pepper to the spice mixture.
