Description

Ingredients

  • 2 medium eggplants, sliced into ½-inch rounds
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 2 tablespoons olive oil
  • ¼ cup grated Parmesan cheese (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the air fryer to 375°F (190°C).
  2. Place the sliced eggplant in a large bowl and sprinkle with salt. Let it sit for about 15 minutes to draw out excess moisture.
  3. Rinse the eggplant slices under cold water and pat them dry with paper towels.
  4. In a separate bowl, mix together the black pepper, garlic powder, onion powder, and smoked paprika.
  5. Drizzle the olive oil over the eggplant slices and toss to coat evenly. Sprinkle the spice mixture over the eggplant and toss again until well coated.
  6. Arrange the eggplant slices in a single layer in the air fryer basket, making sure they are not overcrowded. You may need to do this in batches.
  7. Cook in the air fryer for 12-15 minutes, flipping halfway through, until the eggplant is golden brown and tender.
  8. If using, sprinkle the grated Parmesan cheese over the eggplant during the last 2 minutes of cooking.
  9. Remove from the air fryer and garnish with fresh parsley before serving.
