Ingredients

For the Savory Base:

  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper

For the Vegetables:

  • 1 cup carrots, sliced
  • 1 cup potatoes, diced
  • 1 cup corn kernels
  • 1 cup green beans, chopped

For the Creamy Sauce & Topping:

  • 1 can (10.5 oz) cream of mushroom soup
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1 cup shredded cheddar cheese

Instructions

  1. Prepare the Meat Base:
    • In a skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat.
    • Add chopped onion and minced garlic. Sauté until softened.
    • Season with salt and black pepper.
  2. Assemble the Casserole:
    • Transfer the beef mixture to a slow cooker or greased baking dish.
    • Add carrots, potatoes, corn, and green beans.
    • Stir in the cream of mushroom soup, thyme, and parsley. Mix well.
  3. Slow Cook or Bake:
    • If using a slow cooker: Cover and cook on LOW for 6-8 hours, or until vegetables are tender.
    • If baking: Cover with foil and bake at 375°F for 45 minutes.
  4. Cheesy Finish:
    • Sprinkle shredded cheddar cheese over the casserole 30 minutes before serving in the slow cooker.
    • If baking, remove foil, add cheese, and bake uncovered for 10 more minutes.
    • Let rest for 10 minutes before serving.

Notes

  • Swap ground beef for turkey or sausage for a variation in flavor.
  • For a vegetarian version, substitute meat with extra vegetables or plant-based crumbles.
  • Experiment with different cheese blends for a unique taste.
