Aromatic Chicken and Rice Dish

Ingredients: 

For the Chicken: 

  • 2 tbsp vegetable oil 
  • 320 grams chopped onion, divided 
  • 1 tsp cumin seeds 
  • 1 tsp coriander seeds 
  • 1 tsp black pepper 
  • 2 cinnamon sticks 
  • 2 bay leaves 
  • 4 cardamom pods 
  • 4 cloves 
  • 1 tbsp grated garlic (15 grams) 
  • 1 whole chicken, cut into pieces 
  • 1 tbsp salt (or to taste) 
  • Hot water (enough to cover the chicken) 
  • 100 grams chopped carrots 
  • 100 grams chopped bell peppers 
  • 100 grams sweet corn 
  • 100 grams sweet peas 
  • 1 tsp grated garlic (10 grams) 
  • Chopped hot pepper (optional, to taste) 
  • 1 tsp ground cumin 
  • 1/2 tsp paprika 
  • 1/2 tsp ground cinnamon 
  • 1/2 tsp ground cardamom 
  • 1/2 tsp ground cloves 
  • Salt (to taste) 

Instructions: 

  1. Prepare the Chicken: 
  • Warm the vegetable oil in a large pot over medium heat. 
  • Add half of the chopped onions and cook until they turn golden brown. 
  • Add cumin seeds, coriander seeds, black pepper, cinnamon sticks, bay leaves, cardamom pods, and cloves. Sauté for a minute until fragrant. 
  • Add 1 tbsp grated garlic and continue to sauté for another minute. 
  • Place the chicken pieces into the pot, searing them until they are browned on all sides. 
  • Season with 1 tbsp salt (or to taste). 
  1. Simmer the Chicken: 
  • Pour hot water over the chicken until it is fully covered. 
  • Bring to a boil, then reduce the heat to low and simmer for about 30 minutes, or until the chicken is tender and cooked through. 
  1. Prepare the Vegetables: 
  • In a separate pan, sauté the remaining chopped onions until translucent. 
  • Add the chopped carrots, bell peppers, sweet corn, sweet peas, and 1 tsp grated garlic. Cook until the vegetables are tender. 
  • If using, add the chopped hot pepper for extra heat. 
  1. Combine and Season: 
  • Add the sautéed vegetables to the pot with the chicken. 
  • Stir in the ground cumin, paprika, ground cinnamon, ground cardamom, and ground cloves. 
  • Adjust the salt to taste. 
  • Allow the mixture to simmer for an additional 10 minutes to let the flavors blend harmoniously. 
  1. Serve: 
  • Serve the aromatic chicken and vegetables over a bed of rice, garnished with fresh herbs if desired.
