Ingredients
- 1 large head of romaine lettuce, washed and chopped
- 2 avocados (1 for the dressing, 1 sliced for topping)
- 2 slices of sourdough bread, cut into cubes
- 2 tablespoons extra virgin olive oil (for croutons)
- ¼ cup freshly grated parmesan cheese
- 2 tablespoons lemon juice (freshly squeezed)
- 1 teaspoon Dijon mustard
- 1 teaspoon Worcestershire sauce (or vegan Worcestershire for vegetarians)
- 1 tablespoon capers (optional, substitute with 2 green olives if needed)
- 1 clove garlic (or 1 teaspoon garlic powder)

Instructions
Step 1: Prepare the Homemade Croutons
- Preheat your oven to 375°F (190°C).
- Toss sourdough bread cubes with olive oil, a pinch of salt, and black pepper.
- Spread the bread cubes evenly on a baking sheet and bake for 8–10 minutes, or until golden and crispy.
Step 2: Make the Avocado Caesar Dressing
- In a blender or food processor, combine the flesh of 1 avocado, lemon juice, Dijon mustard, Worcestershire sauce, capers, garlic, olive oil, and 2 tablespoons grated parmesan cheese.
- Blend until smooth and creamy. Add 1–2 tablespoons of water if needed to thin the dressing to your desired consistency.
- Taste and adjust seasoning with salt and pepper.
Step 3: Assemble the Salad
- Place the chopped romaine lettuce in a large salad bowl.
- Add the homemade croutons, sliced avocado, and remaining grated parmesan cheese.
Step 4: Toss and Serve
- Drizzle the avocado Caesar dressing over the salad. Start with a small amount and add more as needed.
- Gently toss to coat all the ingredients evenly.
