Ingredients

  • 1 large head of romaine lettuce, washed and chopped

  • 2 slices of sourdough bread, cut into cubes
  • 2 tablespoons extra virgin olive oil (for croutons)
  • ¼ cup freshly grated parmesan cheese
  • 2 tablespoons lemon juice (freshly squeezed)
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Worcestershire sauce (or vegan Worcestershire for vegetarians)
  • 1 tablespoon capers (optional, substitute with 2 green olives if needed)
  • 1 clove garlic (or 1 teaspoon garlic powder)
  • Salt and black pepper, to taste

Instructions

Step 1: Prepare the Homemade Croutons

  1. Preheat your oven to 375°F (190°C).
  2. Toss sourdough bread cubes with olive oil, a pinch of salt, and black pepper.
  3. Spread the bread cubes evenly on a baking sheet and bake for 8–10 minutes, or until golden and crispy.

Step 2: Make the Avocado Caesar Dressing

  1. In a blender or food processor, combine the flesh of 1 avocado, lemon juice, Dijon mustard, Worcestershire sauce, capers, garlic, olive oil, and 2 tablespoons grated parmesan cheese.
  2. Blend until smooth and creamy. Add 1–2 tablespoons of water if needed to thin the dressing to your desired consistency.
  3. Taste and adjust seasoning with salt and pepper.

Step 3: Assemble the Salad

  1. Place the chopped romaine lettuce in a large salad bowl.
  2. Add the homemade croutons, sliced avocado, and remaining grated parmesan cheese.

Step 4: Toss and Serve

  1. Drizzle the avocado Caesar dressing over the salad. Start with a small amount and add more as needed.
  2. Gently toss to coat all the ingredients evenly.
