Instructions

  • Prepare the Potatoes:

    • Preheat the oven to 400°F (200°C).
    • Wash the potatoes thoroughly and pierce each one several times with a fork.
    • Place the potatoes directly on the oven rack and bake for 45–60 minutes until tender.
  • Cook the Bacon:

    • While the potatoes bake, cook the bacon in a skillet over medium heat until crispy.
    • Drain on paper towels and chop into small pieces once cooled.
  • Scoop Out the Filling:

    • When the potatoes are cool enough to handle, slice them in half lengthwise.
    • Carefully scoop out the insides, leaving a thin layer to maintain the potato skin’s structure.
    • Transfer the scooped potato into a bowl.
  • Make the Filling:

    • Mash the scooped potato with cream, salt, and pepper until smooth.
    • Stir in the chopped bacon, shredded mozzarella cheese, and green onions. Mix thoroughly.
  • Stuff the Potatoes:

    • Spoon the filling back into the hollowed potato skins, mounding slightly for an attractive look.
