Description

Baked Broccoli with Feta and Lemon is a vibrant, healthy dish bursting with flavor. Perfectly roasted broccoli and cherry tomatoes combine with creamy feta and a zingy lemon finish, creating a versatile recipe that works as a hearty side or a light main course. With minimal effort and maximum flavor, this is a go-to dish for any occasion!

Ingredients

  • 1 medium broccoli, cut into florets
  • 200 grams feta cheese, crumbled or cut into small chunks
  • 1 cup cherry tomatoes, halved
  • 1/2 lemon, sliced thinly
  • 1 small white or red onion, finely sliced
  • Olive oil (for drizzling)
  • 1/2 teaspoon cumin
  • Juice of 1/2 lemon
  • Salt (to taste)
  • Pepper (to taste)
  • Fresh parsley, chopped (for garnish)

Instructions

  • Preheat the Oven: Preheat your oven to 400ยฐF (200ยฐC).
  • Prepare the Vegetables: Cut the broccoli into bite-sized florets, halve the cherry tomatoes, and thinly slice the lemon and onion.
  • Assemble on a Baking Sheet: Arrange broccoli, cherry tomatoes, lemon slices, and onion evenly on a baking sheet.
  • Drizzle and Season: Generously drizzle olive oil over the vegetables. Sprinkle with cumin, salt, and pepper. Toss to coat evenly.
  • Bake Vegetables: Roast in the oven for 20โ€“25 minutes, or until the broccoli is tender and slightly crispy at the edges, and the tomatoes are softened.
  • Add Feta and Lemon Juice: Remove the baking sheet from the oven. Scatter crumbled feta cheese over the vegetables and drizzle with the juice of half a lemon.
  • Finish Baking: Return the baking sheet to the oven for 5 more minutes to warm the feta.
  • Garnish and Serve: Remove from the oven, sprinkle with freshly chopped parsley, and serve hot.

Notes

  • Broccoli Tip: Ensure the broccoli florets are dry before roasting for the best texture.
  • Feta Alternatives: If you prefer, goat cheese or ricotta salata works well in place of feta.
  • Lemon Flavor: Adjust the amount of lemon juice based on your taste preference for tanginess.
  • Make It a Meal: Pair this dish with grilled chicken, fish, or tofu for a complete meal.
  • Storage: Leftovers can be stored in an airtight container in the fridge for up to 3 days. Reheat in the oven for the best results.
