- Olive oil (for drizzling)
- 1/2 teaspoon cumin
- Juice of 1/2 lemon
- Salt (to taste)
- Pepper (to taste)
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat the Oven: Preheat your oven to 400ยฐF (200ยฐC).
- Prepare the Vegetables: Cut the broccoli into bite-sized florets, halve the cherry tomatoes, and thinly slice the lemon and onion.

Notes
- Broccoli Tip: Ensure the broccoli florets are dry before roasting for the best texture.
- Feta Alternatives: If you prefer, goat cheese or ricotta salata works well in place of feta.
- Lemon Flavor: Adjust the amount of lemon juice based on your taste preference for tanginess.
- Make It a Meal: Pair this dish with grilled chicken, fish, or tofu for a complete meal.
- Storage: Leftovers can be stored in an airtight container in the fridge for up to 3 days. Reheat in the oven for the best results.
