Description

Baked French Toast Muffins are a delightful breakfast treat that combines the classic flavors of French toast in a convenient muffin form.

Ingredients

  • 2 cups cubed day-old bread (such as French or brioche)
  • 4 large eggs
  • 1 cup milk
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup melted butter
  • 1/2 cup maple syrup (for serving)
  • Powdered sugar (for dusting, optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a muffin tin with cooking spray or butter.
  2. In a large bowl, whisk together the eggs, milk, granulated sugar, vanilla extract, ground cinnamon, and salt until well combined.
  3. Add the cubed bread to the egg mixture and gently fold until all the bread is coated. Let it sit for about 10 minutes to absorb the liquid.
  4. Divide the bread mixture evenly among the muffin cups, filling each about 3/4 full.
  5. Drizzle the melted butter over the top of each muffin.
  6. Bake in the preheated oven for 20-25 minutes, or until the muffins are golden brown and a toothpick inserted in the center comes out clean.
  7. Allow the muffins to cool for a few minutes before removing them from the tin. Serve warm with maple syrup and a dusting of powdered sugar if desired.

Notes

  • For a fruity twist, add 1/2 cup of fresh or frozen berries to the bread mixture before baking.
  • Substitute almond milk or oat milk for a dairy-free version, and use a sugar substitute if desired for a lower-calorie option.
