Ingredients
- 2 cups cubed day-old bread (such as French or brioche)
- 4 large eggs
- 1 cup milk
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/4 cup melted butter
- 1/2 cup maple syrup (for serving)
- Powdered sugar (for dusting, optional)
Instructions
- Preheat the oven to 350°F (175°C) and grease a muffin tin with cooking spray or butter.
- In a large bowl, whisk together the eggs, milk, granulated sugar, vanilla extract, ground cinnamon, and salt until well combined.
- Add the cubed bread to the egg mixture and gently fold until all the bread is coated. Let it sit for about 10 minutes to absorb the liquid.
- Divide the bread mixture evenly among the muffin cups, filling each about 3/4 full.
- Drizzle the melted butter over the top of each muffin.
- Bake in the preheated oven for 20-25 minutes, or until the muffins are golden brown and a toothpick inserted in the center comes out clean.
- Allow the muffins to cool for a few minutes before removing them from the tin. Serve warm with maple syrup and a dusting of powdered sugar if desired.
