Ingredients
- 3 cups all-purpose flour
- 1/4 cup granulated sugar
- 2 1/4 teaspoons instant yeast
- 1/4 teaspoon salt
- 6 tablespoons unsalted butter (softened)
- 1 large egg
- 1 tablespoon vegetable oil
- 1 1/16 cup warm water (105°F–110°F)
- 2/3 cup raspberry jam
- 1 cup powdered sugar
- 1 teaspoon pure vanilla extract
- 2–3 tablespoons water (for the glaze)
Instructions
1. Prepare the Dough
- In a large bowl, mix the all-purpose flour, instant yeast, granulated sugar, and salt.
- Add warm water, vegetable oil, and softened butter to the dry ingredients. Mix until the dough starts coming together.
- Add the egg and knead the dough on a floured surface for about 5–7 minutes, until smooth and elastic.
- Place the dough in a greased bowl, cover it with a towel, and let it rise in a warm spot for 1 hour, or until doubled in size.
2. Shape the Donuts
- Roll out the risen dough on a floured surface to about ½-inch thickness.
- Use a donut cutter (or a large and small round cutter) to shape the donuts. Save the donut holes if desired.
- Place the cut-out donuts on a parchment-lined baking sheet. Cover and let them rise for another 30 minutes.
3. Bake the Donuts
- Preheat your oven to 375°F (190°C).
- Brush the tops of the donuts lightly with melted butter.
- Bake for 10–12 minutes, or until golden brown.
4. Fill with Raspberry Jam
- Allow the baked donuts to cool slightly.
- Using a piping bag fitted with a narrow tip, inject about 1–2 teaspoons of raspberry jam into each donut from the side.
5. Make the Glaze and Dip the Donuts
- In a bowl, mix powdered sugar, vanilla extract, and 2–3 tablespoons of water until smooth.
- Dip the tops of the donuts into the glaze, letting any excess drip off.
Notes
- Rising Tip: If your kitchen is cold, you can let the dough rise in a warm oven (set to 100°F or the lowest temperature setting, then turned off).
- Substitutions: Feel free to use strawberry or apricot jam if raspberry isn’t available.
- Filling Shortcut: If you don’t have a piping bag, you can cut the donuts in half and spread the jam in the middle like a sandwich.
- Gluten-Free Option: Substitute all-purpose flour with a gluten-free baking mix that includes xanthan gum.
