Ingredients

  • 2 (6-ounce) salmon fillets
  • 1 cup fresh spinach, chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup cream cheese, softened
  • 1/4 cup breadcrumbs
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon lemon juice
  • Salt and pepper to taste
  • 1 tablespoon fresh dill, chopped (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking dish with parchment paper or lightly grease it with cooking spray.
  2. In a medium bowl, combine the chopped spinach, feta cheese, cream cheese, breadcrumbs, olive oil, garlic powder, lemon juice, salt, pepper, and dill (if using). Mix well until all ingredients are evenly combined.
  3. Place the salmon fillets skin-side down on the prepared baking dish. Use a sharp knife to make a pocket in each fillet by slicing horizontally, being careful not to cut all the way through.
  4. Stuff each salmon fillet with the spinach and feta mixture, pressing gently to secure the filling inside.
  5. Bake in the preheated oven for 20-25 minutes, or until the salmon is cooked through and flakes easily with a fork.
  6. Remove from the oven and let it rest for a few minutes before serving.

  • For a bit of heat, add a pinch of red pepper flakes to the stuffing mixture.
