Ingredients

  • 1 large zucchini

  • 1 tablespoon sour cream
  • 1 tablespoon mayonnaise
  • A bunch of parsley, chopped
  • Chives, chopped

Instructions

1. Prepare the Zucchini

  • Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it with olive oil.
  • Wash the zucchini thoroughly and cut it into 1/4-inch thick slices.
  • In a large bowl, toss the zucchini slices with salt, paprika, black pepper, and olive oil until evenly coated.

2. Prepare the Toppings

  • In a small bowl, mix the minced garlic, chopped parsley, and chives.
  • In another bowl, combine sour cream and mayonnaise until smooth.

3. Assemble the Dish

  • Arrange the seasoned zucchini slices in a single layer on the prepared baking sheet.
  • Sprinkle the garlic and herb mixture over the zucchini slices.
  • Top the slices with shredded mozzarella cheese.
  • Dot small spoonfuls of the sour cream and mayonnaise mixture over the cheese for added creaminess.

4. Bake the Zucchini

  • Place the baking sheet in the preheated oven and bake for 20–25 minutes, or until the zucchini is tender and the cheese is melted and bubbly.
  • For a crispy, golden top, broil the zucchini for an additional 2–3 minutes, keeping a close eye to prevent burning.

5. Serve
