Ingredients
- 1 large zucchini
- 1 teaspoon salt
- 2 teaspoons paprika

- 200 grams mozzarella cheese, shredded
- 1 tablespoon sour cream
- 1 tablespoon mayonnaise
- A bunch of parsley, chopped

Instructions
1. Prepare the Zucchini
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it with olive oil.
- Wash the zucchini thoroughly and cut it into 1/4-inch thick slices.
- In a large bowl, toss the zucchini slices with salt, paprika, black pepper, and olive oil until evenly coated.
2. Prepare the Toppings
- In a small bowl, mix the minced garlic, chopped parsley, and chives.
- In another bowl, combine sour cream and mayonnaise until smooth.
3. Assemble the Dish
- Arrange the seasoned zucchini slices in a single layer on the prepared baking sheet.
- Sprinkle the garlic and herb mixture over the zucchini slices.
- Top the slices with shredded mozzarella cheese.
- Dot small spoonfuls of the sour cream and mayonnaise mixture over the cheese for added creaminess.
4. Bake the Zucchini
- Place the baking sheet in the preheated oven and bake for 20–25 minutes, or until the zucchini is tender and the cheese is melted and bubbly.
- For a crispy, golden top, broil the zucchini for an additional 2–3 minutes, keeping a close eye to prevent burning.
5. Serve
- Remove the baked zucchini from the oven and let it cool slightly.
- Garnish with extra chopped parsley and chives, and serve warm.
