Description

Delicious and moist Banana Pudding Brownies topped with creamy banana pudding and whipped topping.

Ingredients

  • 1 cup unsalted butter, melted
  • 1 ½ cups granulated sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup all-purpose flour
  • ½ cup unsweetened cocoa powder
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 1 cup mashed ripe bananas (about 23 bananas)
  • 1 cup vanilla pudding mix (instant)
  • 2 cups milk
  • 1 cup whipped topping (like Cool Whip)
  • 1 banana, sliced (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan or line it with parchment paper for easy removal.
  2. In a large mixing bowl, combine the melted butter, granulated sugar, and vanilla extract. Stir until well combined.
  3. Add the eggs one at a time, mixing well after each addition.
  4. In a separate bowl, whisk together the flour, cocoa powder, baking powder, and salt. Gradually add this dry mixture to the wet ingredients, stirring until just combined.
  5. Fold in the mashed bananas until evenly distributed in the batter. Pour the brownie batter into the prepared baking pan and spread it evenly.
  6. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs. Let the brownies cool completely in the pan.
  7. While the brownies are cooling, prepare the banana pudding. In a medium bowl, whisk together the instant vanilla pudding mix and milk until thickened, about 2 minutes.
  8. Once the brownies are cool, spread the banana pudding evenly over the top.
  9. Top with whipped topping, smoothing it out to cover the pudding layer.
  10. Garnish with sliced bananas on top. Refrigerate for at least 2 hours before serving to allow the flavors to meld.

Notes

  • For added texture, mix in ½ cup of chopped nuts or chocolate chips into the brownie batter before baking.
  • Substitute the vanilla pudding with banana pudding for an extra banana flavor.
