Delicious and moist Banana Pudding Brownies topped with creamy banana pudding and whipped topping.
Ingredients
- 1 cup unsalted butter, melted
- 1 ½ cups granulated sugar
- 1 teaspoon vanilla extract
- 4 large eggs
- 1 cup all-purpose flour
- ½ cup unsweetened cocoa powder
- ½ teaspoon baking powder
- ¼ teaspoon salt
- 1 cup mashed ripe bananas (about 2–3 bananas)
- 1 cup vanilla pudding mix (instant)
- 2 cups milk
- 1 cup whipped topping (like Cool Whip)
- 1 banana, sliced (for topping)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan or line it with parchment paper for easy removal.
- In a large mixing bowl, combine the melted butter, granulated sugar, and vanilla extract. Stir until well combined.
- Add the eggs one at a time, mixing well after each addition.
- In a separate bowl, whisk together the flour, cocoa powder, baking powder, and salt. Gradually add this dry mixture to the wet ingredients, stirring until just combined.
- Fold in the mashed bananas until evenly distributed in the batter. Pour the brownie batter into the prepared baking pan and spread it evenly.
- Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs. Let the brownies cool completely in the pan.
- While the brownies are cooling, prepare the banana pudding. In a medium bowl, whisk together the instant vanilla pudding mix and milk until thickened, about 2 minutes.
- Once the brownies are cool, spread the banana pudding evenly over the top.
- Top with whipped topping, smoothing it out to cover the pudding layer.
- Garnish with sliced bananas on top. Refrigerate for at least 2 hours before serving to allow the flavors to meld.
Notes
- For added texture, mix in ½ cup of chopped nuts or chocolate chips into the brownie batter before baking.
- Substitute the vanilla pudding with banana pudding for an extra banana flavor.
