Description

Bang Bang Chicken Skewers are a flavorful and spicy grilled dish made with marinated chicken cubes, perfect for summer barbecues or a quick weeknight dinner.


Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 2 tablespoons sriracha (adjust to taste)
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • Wooden or metal skewers (if using wooden skewers, soak in water for 30 minutes)

Instructions

  1. In a large bowl, combine mayonnaise, sweet chili sauce, sriracha, garlic powder, onion powder, salt, and black pepper. Mix well to create the bang bang sauce. Reserve 1/4 cup of the sauce for serving.
  2. Add the chicken cubes to the bowl and toss to coat evenly with the sauce. Cover and refrigerate for at least 30 minutes to marinate.
  3. Preheat your grill or grill pan over medium-high heat. If using a grill, lightly oil the grates.
  4. Thread the marinated chicken onto the skewers, leaving a little space between each piece for even cooking.
  5. Grill the skewers for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. The internal temperature should reach 165°F.
  6. Remove the skewers from the grill and brush with a little olive oil if desired. Serve hot with the reserved bang bang sauce for dipping.

Notes

  • For a spicy kick, add more sriracha to the marinade or sprinkle red pepper flakes on the chicken before grilling.
  • For a healthier option, substitute Greek yogurt for mayonnaise in the sauce.
