Description
Bang Bang Chicken Skewers are a flavorful and spicy grilled dish made with marinated chicken cubes, perfect for summer barbecues or a quick weeknight dinner.
Ingredients
- 1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
- 1/2 cup mayonnaise
- 1/4 cup sweet chili sauce
- 2 tablespoons sriracha (adjust to taste)
- 2 teaspoons garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
- Wooden or metal skewers (if using wooden skewers, soak in water for 30 minutes)
Instructions
- In a large bowl, combine mayonnaise, sweet chili sauce, sriracha, garlic powder, onion powder, salt, and black pepper. Mix well to create the bang bang sauce. Reserve 1/4 cup of the sauce for serving.
- Add the chicken cubes to the bowl and toss to coat evenly with the sauce. Cover and refrigerate for at least 30 minutes to marinate.
- Preheat your grill or grill pan over medium-high heat. If using a grill, lightly oil the grates.
- Thread the marinated chicken onto the skewers, leaving a little space between each piece for even cooking.
- Grill the skewers for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. The internal temperature should reach 165°F.
- Remove the skewers from the grill and brush with a little olive oil if desired. Serve hot with the reserved bang bang sauce for dipping.
Notes
- For a spicy kick, add more sriracha to the marinade or sprinkle red pepper flakes on the chicken before grilling.
- For a healthier option, substitute Greek yogurt for mayonnaise in the sauce.
