Description

Barbecue Peach Chicken brings summer to your grill with a delicious combination of grilled chicken thighs and sweet peaches, all coated in barbecue sauce.


Ingredients

  • 2 pounds boneless, skinless chicken thighs
  • 1 cup barbecue sauce
  • 2 ripe peaches, pitted and sliced
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Preheat your grill to medium-high heat.
  2. In a large bowl, combine the olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper. Add the chicken thighs and toss until they are well coated with the marinade. Let them marinate for at least 15 minutes.
  3. While the chicken is marinating, prepare the peaches by slicing them into wedges.
  4. Once the grill is ready, place the marinated chicken thighs on the grill. Cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F.
  5. During the last few minutes of grilling, add the peach slices to the grill. Cook for about 2-3 minutes on each side until they are slightly charred and softened.
  6. Remove the chicken and peaches from the grill. Brush the chicken with barbecue sauce and let it rest for a few minutes.
  7. Serve the chicken topped with grilled peaches and garnish with fresh cilantro if desired.

  • For a spicier kick, add a teaspoon of cayenne pepper to the marinade.
