Description

BBQ Chicken Grilled Cheese is a delicious and satisfying sandwich that combines tender shredded chicken coated in barbecue sauce with melted cheese, all grilled to perfection.


Ingredients

  • 2 cups cooked, shredded chicken
  • 1 cup barbecue sauce
  • 8 slices of bread (your choice)
  • 4 slices of cheddar cheese
  • 4 slices of mozzarella cheese
  • 4 tablespoons butter
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. In a mixing bowl, combine the shredded chicken and barbecue sauce. Stir until the chicken is well coated. Season with salt and pepper to taste.
  2. Heat a skillet over medium heat. While the skillet is heating, butter one side of each slice of bread.
  3. Place four slices of bread, buttered side down, onto the skillet.
  4. Layer each slice with a slice of cheddar cheese, followed by a generous portion of the BBQ chicken mixture, and then a slice of mozzarella cheese.
  5. Top with the remaining slices of bread, buttered side up.
  6. Cook for about 3-4 minutes or until the bottom slice is golden brown and the cheese begins to melt.
  7. Carefully flip the sandwiches and cook for another 3-4 minutes until the other side is golden brown and the cheese is fully melted.
  8. Remove from the skillet and let cool for a minute before slicing in half.

Notes

  • For added flavor, mix in some chopped green onions or jalapeños into the BBQ chicken mixture.
