BBQ Chicken & Roasted Sweet Potato Bowls: Smoky, Sweet, and Packed with Flavor
Ingredients
- 1 pound boneless, skinless chicken breasts
- 1 cup BBQ sauce (your favorite brand)
- 2 medium sweet potatoes, peeled and diced into 1-inch cubes
- 2 tablespoons olive oil
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 cup corn (fresh, frozen, or canned)
- 1 cup black beans, drained and rinsed
- 1 avocado, sliced
- ¼ cup chopped fresh cilantro (optional)
- Lime wedges for serving
Instructions
- Preheat your oven to 425°F (220°C).
- In a large bowl, toss the diced sweet potatoes with olive oil, paprika, garlic powder, salt, and black pepper until evenly coated. Spread them out in a single layer on a baking sheet.
- Roast the sweet potatoes in the preheated oven for 25-30 minutes, or until they are tender and lightly browned, stirring halfway through.
- While the sweet potatoes are roasting, heat a grill pan or skillet over medium-high heat. Brush the chicken breasts with a little olive oil and season with salt and pepper.
- Cook the chicken for about 6-7 minutes on each side, or until fully cooked and no longer pink in the center. During the last few minutes of cooking, brush the chicken with BBQ sauce to glaze it.
- Remove the chicken from the heat and let it rest for a few minutes before slicing it into strips.
- In a large bowl, combine the roasted sweet potatoes, corn, and black beans. Toss gently to mix.
- To assemble the bowls, divide the sweet potato mixture among four serving bowls. Top each bowl with sliced BBQ chicken, avocado, and cilantro if desired. Serve with lime wedges on the side.
Notes
- For a spicier kick, add diced jalapeños to the sweet potato mixture before roasting.
- Substitute the chicken with grilled tofu or tempeh for a vegetarian option, using the same BBQ sauce for flavor.
