Description

BBQ Pineapple Chicken Kabobs are a delicious and flavorful dish that combines tender chicken, sweet pineapple, and colorful vegetables, all grilled to perfection.

Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 cup fresh pineapple, cut into 1-inch cubes
  • 1 red bell pepper, cut into 1-inch pieces
  • 1 green bell pepper, cut into 1-inch pieces
  • 1 medium red onion, cut into 1-inch pieces
  • 1/2 cup barbecue sauce
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Wood or metal skewers

Instructions

  1. Preheat your grill to medium-high heat. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
  2. In a large bowl, combine the chicken, pineapple, red bell pepper, green bell pepper, and red onion.
  3. In a separate small bowl, mix together the barbecue sauce, olive oil, garlic powder, onion powder, salt, and black pepper.
  4. Pour the marinade over the chicken and vegetables, tossing to coat evenly. Let it marinate for at least 15 minutes.
  5. Thread the chicken, pineapple, and vegetables onto the skewers, alternating between each ingredient.
  6. Place the skewers on the grill and cook for 10-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. The internal temperature of the chicken should reach 165°F.
  7. Remove the kabobs from the grill and let them rest for a few minutes before serving.

Notes

  • For added flavor, try marinating the chicken overnight for a deeper taste.
  • You can substitute the pineapple with other fruits like peaches or mango for a different twist.
  • If you prefer a spicier kick, add some jalapeño slices to the skewers.
