Description

Savory Beef Enchiladas are a delicious and hearty dish made with ground beef, refried beans, and topped with cheese and enchilada sauce.


Ingredients

  • 1 pound ground beef
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 can (15 ounces) refried beans
  • 1 can (10 ounces) enchilada sauce
  • 8 flour tortillas (8-inch)
  • 2 cups shredded cheddar cheese
  • 1/2 cup sour cream (for serving)
  • Chopped fresh cilantro (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, heat over medium flame, add the ground beef, onion, and garlic, cooking until the beef is thoroughly browned and the onion becomes soft and translucent, about 5-7 minutes. Drain any excess fat.
  3. Incorporate the cumin, chili powder, salt, and black pepper into the beef mixture, cooking for an additional 2 minutes.
  4. Remove from heat and fold in the refried beans until smooth and well-combined.
  5. Spread half a cup of enchilada sauce evenly across the bottom of a 9×13-inch baking dish.
  6. Place about 1/4 cup of the beef and bean mixture in the center of each tortilla, add a sprinkle of cheese, and roll them up tightly. Arrange seam-side down in the baking dish.
  7. Pour the remaining enchilada sauce over the rolled tortillas and sprinkle the rest of the cheese on top.
  8. Cover the dish with aluminum foil and bake for 20 minutes. Remove the foil and continue baking for another 10 minutes, or until the cheese is melted and bubbly.
  9. Allow the enchiladas to rest before serving. Top with sour cream and fresh cilantro.
