Description

Ingredients

  • 1 pound ground beef
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup shredded cheddar cheese
  • 12 small corn tortillas
  • Vegetable oil for frying
  • Sour cream, for serving
  • Salsa, for serving

Instructions

  1. In a large skillet over medium heat, cook the ground beef until browned, breaking it apart with a spoon, about 5-7 minutes. Drain any excess fat.
  2. Stir in the chili powder, cumin, garlic powder, onion powder, salt, and black pepper. Cook for an additional 2-3 minutes until the spices are well combined and fragrant.
  3. Remove the skillet from heat and stir in the shredded cheddar cheese until melted and evenly distributed.
  4. In a separate skillet, heat about 1/4 inch of vegetable oil over medium heat.
  5. While the oil is heating, warm the corn tortillas in the microwave for about 30 seconds to make them pliable.
  6. Spoon about 2 tablespoons of the beef mixture onto one end of each tortilla. Roll tightly and secure with a toothpick if necessary.
  7. Carefully place the rolled taquitos in the hot oil, seam side down, and fry until golden brown and crispy, about 2-3 minutes per side.
  8. Remove the taquitos from the oil and place them on a paper towel-lined plate to drain excess oil.
  9. Serve hot with sour cream and salsa on the side.
