Description

A vibrant and flavorful beet salad featuring fresh spinach, sweet mandarin oranges, crunchy pine nuts, and creamy feta cheese.


Ingredients

  • 4 medium-sized beets, roasted and diced
  • 6 cups fresh spinach, washed and dried
  • 1 cup canned mandarin oranges, drained
  • 1/2 small red onion, thinly sliced
  • 1/2 cup pine nuts, toasted
  • 1 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Wrap each beet in aluminum foil and roast for about 45-60 minutes, or until tender. Allow to cool, then peel and dice the beets.
  2. In a large bowl, combine the fresh spinach, diced beets, mandarin oranges, and sliced red onion.
  3. In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper.
  4. Drizzle the dressing over the salad and toss gently to combine.
  5. Sprinkle the toasted pine nuts and crumbled feta cheese on top of the salad.
  6. Serve immediately or refrigerate for 30 minutes to allow the flavors to meld before serving.
