A vibrant and flavorful beet salad featuring fresh spinach, sweet mandarin oranges, crunchy pine nuts, and creamy feta cheese.
Ingredients
- 4 medium-sized beets, roasted and diced
- 6 cups fresh spinach, washed and dried
- 1 cup canned mandarin oranges, drained
- 1/2 small red onion, thinly sliced
- 1/2 cup pine nuts, toasted
- 1 cup feta cheese, crumbled
- 1/4 cup olive oil
- 2 tablespoons balsamic vinegar
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C). Wrap each beet in aluminum foil and roast for about 45-60 minutes, or until tender. Allow to cool, then peel and dice the beets.
- In a large bowl, combine the fresh spinach, diced beets, mandarin oranges, and sliced red onion.
- In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper.
- Drizzle the dressing over the salad and toss gently to combine.
- Sprinkle the toasted pine nuts and crumbled feta cheese on top of the salad.
- Serve immediately or refrigerate for 30 minutes to allow the flavors to meld before serving.
Notes
- For added crunch, substitute sunflower seeds for pine nuts.
- Add sliced avocado for a creamier texture and extra healthy fats.
