Ingredients

  • 2 cups mixed berries (strawberries, blueberries, raspberries)
  • 1 cup mascarpone cheese
  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup brewed coffee, cooled
  • 1 tablespoon coffee liqueur (optional)
  • 24 ladyfinger cookies
  • Cocoa powder for dusting

Instructions

  1. In a medium bowl, combine the mascarpone cheese, heavy cream, powdered sugar, and vanilla extract. Using an electric mixer, beat until the mixture is smooth and forms soft peaks.
  2. In a shallow dish, mix the brewed coffee and coffee liqueur (if using). Dip each ladyfinger into the coffee mixture for about 1-2 seconds, ensuring they are soaked but not soggy.
  3. In a 9×9-inch dish, layer half of the dipped ladyfingers at the bottom.
  4. Spread half of the mascarpone mixture over the ladyfingers, then layer half of the mixed berries on top.
  5. Repeat the layers with the remaining ladyfingers, mascarpone mixture, and berries.
  6. Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight for best results.
  7. Before serving, dust the top with cocoa powder and garnish with additional berries if desired.
