Ingredients

Base Layer

  • 150 g sunflower seeds
  • 200 g dates (soaked)
  • 1–2 tablespoons cocoa powder (optional)

Cream Layer

  • 140 g raw cashew nuts (soaked)
  • 150 ml coconut milk
  • 30 ml coconut oil
  • 2–3 tablespoons maple syrup

Decoration

  • Melted chocolate
  • Chopped nuts of your choice

Instructions

1. Prepare the Base Layer

  • Soak the dates in warm water for about 10 minutes to soften, then drain.
  • In a food processor, blend the sunflower seeds until finely ground.
  • Add the soaked dates and cocoa powder (if using). Process until the mixture becomes sticky and holds together when pressed.
  • Press the mixture into the bottom of a lined baking pan, forming an even layer. Place the pan in the refrigerator to chill.

2. Prepare the Cream Layer

  • Soak the raw cashews in hot water for at least 15 minutes, then drain.
  • In a blender or food processor, combine the soaked cashews, coconut milk, coconut oil, and maple syrup. Blend until smooth and creamy.
  • Spread the cashew cream over the chilled base layer evenly with a spatula.
  • Place the pan back in the refrigerator to set for at least 2 hours, or until firm.

3. Add Decorations

  • Once the dessert is set, drizzle melted chocolate over the top.
  • Sprinkle chopped nuts on top for added flavor and texture.

4. Serve and Enjoy

  • Cut the dessert into bars or squares for serving.
