Ingredients
Base Layer
- 150 g sunflower seeds
- 200 g dates (soaked)
- 1β2 tablespoons cocoa powder (optional)
Cream Layer
- 140 g raw cashew nuts (soaked)
- 150 ml coconut milk
- 30 ml coconut oil
- 2β3 tablespoons maple syrup
Decoration
- Melted chocolate
- Chopped nuts of your choice
Instructions
1. Prepare the Base Layer
- Soak the dates in warm water for about 10 minutes to soften, then drain.
- In a food processor, blend the sunflower seeds until finely ground.
- Add the soaked dates and cocoa powder (if using). Process until the mixture becomes sticky and holds together when pressed.
- Press the mixture into the bottom of a lined baking pan, forming an even layer. Place the pan in the refrigerator to chill.
2. Prepare the Cream Layer
- Soak the raw cashews in hot water for at least 15 minutes, then drain.
- In a blender or food processor, combine the soaked cashews, coconut milk, coconut oil, and maple syrup. Blend until smooth and creamy.
- Spread the cashew cream over the chilled base layer evenly with a spatula.
- Place the pan back in the refrigerator to set for at least 2 hours, or until firm.
3. Add Decorations
- Once the dessert is set, drizzle melted chocolate over the top.
- Sprinkle chopped nuts on top for added flavor and texture.
4. Serve and Enjoy
