Description

Delicious Blackstone Chicken Fajita Quesadillas made with shredded chicken, bell peppers, and cheese, perfect for a quick meal.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 tablespoon olive oil
  • 1 medium onion, sliced
  • 1 bell pepper (any color), sliced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 flour tortillas (10-inch)
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • Sour cream and salsa for serving

Instructions

  1. Preheat your Blackstone griddle over medium heat.
  2. In a large skillet, heat the olive oil. Add the sliced onion and bell pepper, cooking until softened, about 5-7 minutes.
  3. Stir in the shredded chicken, chili powder, cumin, garlic powder, salt, and black pepper. Cook for an additional 3-4 minutes until heated through. Remove from heat.
  4. Place a tortilla on the griddle. Sprinkle half of the tortilla with 1/4 cup of cheese, then add a generous scoop of the chicken and vegetable mixture on top. Sprinkle another 1/4 cup of cheese over the filling and fold the tortilla in half.
  5. Cook for 3-4 minutes on each side, or until the tortilla is golden brown and the cheese is melted. Repeat with the remaining tortillas and filling.
  6. Cut each quesadilla into wedges and serve hot with sour cream and salsa on the side.

Notes

  • For a smoky flavor, add a teaspoon of smoked paprika to the chicken mixture.
  • To make it vegetarian, substitute the chicken with black beans or sautéed mushrooms.
