Delicious Blackstone Chicken Fajita Quesadillas made with shredded chicken, bell peppers, and cheese, perfect for a quick meal.
Ingredients
- 2 cups cooked chicken, shredded
- 1 tablespoon olive oil
- 1 medium onion, sliced
- 1 bell pepper (any color), sliced
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 8 flour tortillas (10-inch)
- 2 cups shredded cheese (cheddar or Mexican blend)
- Sour cream and salsa for serving
Instructions
- Preheat your Blackstone griddle over medium heat.
- In a large skillet, heat the olive oil. Add the sliced onion and bell pepper, cooking until softened, about 5-7 minutes.
- Stir in the shredded chicken, chili powder, cumin, garlic powder, salt, and black pepper. Cook for an additional 3-4 minutes until heated through. Remove from heat.
- Place a tortilla on the griddle. Sprinkle half of the tortilla with 1/4 cup of cheese, then add a generous scoop of the chicken and vegetable mixture on top. Sprinkle another 1/4 cup of cheese over the filling and fold the tortilla in half.
- Cook for 3-4 minutes on each side, or until the tortilla is golden brown and the cheese is melted. Repeat with the remaining tortillas and filling.
- Cut each quesadilla into wedges and serve hot with sour cream and salsa on the side.
Notes
- For a smoky flavor, add a teaspoon of smoked paprika to the chicken mixture.
- To make it vegetarian, substitute the chicken with black beans or sautéed mushrooms.
