Blueberry Cream Cheese Egg Rolls are a delicious twist on traditional egg rolls, filled with a creamy blueberry mixture and fried to golden perfection.
Ingredients
- 1 cup fresh blueberries
- 4 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1/2 teaspoon vanilla extract
- 8 egg roll wrappers
- Vegetable oil, for frying
- Powdered sugar, for dusting (optional)
Instructions
- In a medium bowl, combine the fresh blueberries, softened cream cheese, powdered sugar, and vanilla extract. Mix until well blended and the blueberries are slightly mashed but still chunky.
- Lay an egg roll wrapper on a clean surface with one corner pointing towards you. Place about 2 tablespoons of the blueberry cream cheese mixture in the center of the wrapper.
- Fold the bottom corner of the wrapper over the filling, then fold in the sides and roll tightly to seal. Use a little water on your fingers to moisten the top corner and seal the roll completely. Repeat with the remaining wrappers and filling.
- In a large skillet or deep fryer, heat about 2 inches of vegetable oil over medium heat until it reaches 350°F.
- Carefully add 2-3 egg rolls at a time to the hot oil, frying for 2-3 minutes on each side or until golden brown. Use a slotted spoon to remove the egg rolls and transfer them to a paper towel-lined plate to drain excess oil.
- Allow the egg rolls to cool slightly before dusting with powdered sugar, if desired. Serve warm.

- For a crispy texture, ensure the oil is hot enough before adding the egg rolls.
- You can also bake the egg rolls at 400°F for 15-20 minutes, flipping halfway through, for a healthier option.
- For a twist, try adding a pinch of cinnamon to the cream cheese mixture or substitute strawberries for blueberries.
