Description

Blueberry Cream Cheese Egg Rolls are a delicious twist on traditional egg rolls, filled with a creamy blueberry mixture and fried to golden perfection.


Ingredients

  • 1 cup fresh blueberries
  • 4 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 8 egg roll wrappers
  • Vegetable oil, for frying
  • Powdered sugar, for dusting (optional)

Instructions

  1. In a medium bowl, combine the fresh blueberries, softened cream cheese, powdered sugar, and vanilla extract. Mix until well blended and the blueberries are slightly mashed but still chunky.
  2. Lay an egg roll wrapper on a clean surface with one corner pointing towards you. Place about 2 tablespoons of the blueberry cream cheese mixture in the center of the wrapper.
  3. Fold the bottom corner of the wrapper over the filling, then fold in the sides and roll tightly to seal. Use a little water on your fingers to moisten the top corner and seal the roll completely. Repeat with the remaining wrappers and filling.
  4. In a large skillet or deep fryer, heat about 2 inches of vegetable oil over medium heat until it reaches 350°F.
  5. Carefully add 2-3 egg rolls at a time to the hot oil, frying for 2-3 minutes on each side or until golden brown. Use a slotted spoon to remove the egg rolls and transfer them to a paper towel-lined plate to drain excess oil.
  6. Allow the egg rolls to cool slightly before dusting with powdered sugar, if desired. Serve warm.
