A delicious Blueberry Dream Cheesecake with a marbled swirl of fresh blueberries, perfect for any occasion.
Ingredients
- 1 ½ cups crushed graham crackers
- ½ cup melted unsalted butter
- ¼ cup sugar
- 24 ounces softened cream cheese
- 1 cup sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup sour cream
- 1 cup fresh blueberries
- ¼ cup sugar
- 1 tablespoon lemon juice
Instructions
- Preheat your oven to 325°F and lightly grease a 9-inch springform pan.
- In a bowl, mix together the crushed graham crackers, melted butter, and sugar until well combined. Press this mixture into the bottom of the prepared pan to create a solid crust.
- Bake for 10 minutes, then set aside to cool.
- In a separate large bowl, whip the softened cream cheese until creamy and smooth using an electric mixer.
- Gradually incorporate the sugar and vanilla, blending until fully combined.
- Add the eggs one at a time, mixing gently after each addition.
- Fold in the sour cream until the mixture is uniform.
- For the blueberry swirl, combine the fresh blueberries, sugar, and lemon juice in a small saucepan over medium heat. Cook for about 5 minutes, stirring occasionally, until the blueberries soften and release their juices. Remove from heat and allow to cool slightly.
- Pour half of the cheesecake mixture into the cooled crust. Drizzle half of the blueberry sauce over the filling and swirl it into the cheesecake with a knife.
- Add the remaining cheesecake mixture on top and repeat the swirling technique with the leftover blueberry sauce.
- Bake the cheesecake for 55-60 minutes, or until the center is set but still has a slight jiggle.
- Turn off the oven and leave the door ajar, letting the cheesecake cool inside for an hour.
- Let it cool completely at room temperature before transferring it to the refrigerator. Chill for at least 4 hours, or overnight for the best flavor, before slicing and serving.
