Description

Ingredients

  • 1 ½ cups crushed graham crackers
  • ½ cup melted unsalted butter
  • ¼ cup sugar
  • 24 ounces softened cream cheese
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup sour cream
  • 1 cup fresh blueberries
  • ¼ cup sugar
  • 1 tablespoon lemon juice

Instructions

  1. Preheat your oven to 325°F and lightly grease a 9-inch springform pan.
  2. In a bowl, mix together the crushed graham crackers, melted butter, and sugar until well combined. Press this mixture into the bottom of the prepared pan to create a solid crust.
  3. Bake for 10 minutes, then set aside to cool.
  4. In a separate large bowl, whip the softened cream cheese until creamy and smooth using an electric mixer.
  5. Gradually incorporate the sugar and vanilla, blending until fully combined.
  6. Add the eggs one at a time, mixing gently after each addition.
  7. Fold in the sour cream until the mixture is uniform.
  8. For the blueberry swirl, combine the fresh blueberries, sugar, and lemon juice in a small saucepan over medium heat. Cook for about 5 minutes, stirring occasionally, until the blueberries soften and release their juices. Remove from heat and allow to cool slightly.
  9. Pour half of the cheesecake mixture into the cooled crust. Drizzle half of the blueberry sauce over the filling and swirl it into the cheesecake with a knife.
  10. Add the remaining cheesecake mixture on top and repeat the swirling technique with the leftover blueberry sauce.
  11. Bake the cheesecake for 55-60 minutes, or until the center is set but still has a slight jiggle.
  12. Turn off the oven and leave the door ajar, letting the cheesecake cool inside for an hour.
  13. Let it cool completely at room temperature before transferring it to the refrigerator. Chill for at least 4 hours, or overnight for the best flavor, before slicing and serving.
