Delicious Blueberry Pie Cookies that combine the flavors of blueberry pie in a soft cookie form.
Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup fresh or frozen blueberries
- 1 tablespoon cornstarch
- 1 teaspoon lemon juice
- 1/2 teaspoon cinnamon
- 1 tablespoon milk (for brushing)
- Granulated sugar (for sprinkling)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
- In a large bowl, cream the softened butter and granulated sugar together until light and fluffy, about 2-3 minutes.
- Beat in the egg and vanilla extract until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- In a small bowl, toss the blueberries with cornstarch, lemon juice, and cinnamon until coated.
- Fold the blueberry mixture gently into the cookie dough.
- Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheet, leaving space between each.
- Flatten each cookie slightly with your hand, then brush the tops with milk and sprinkle with granulated sugar.
- Bake for 12-15 minutes, or until the edges are lightly golden. Let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
- For a more intense blueberry flavor, try adding a teaspoon of blueberry extract to the dough.
- If you prefer a more tart cookie, substitute half of the blueberries with chopped fresh strawberries or raspberries.
