Ingredients

  • 2 salmon fillets (about 6 ounces each)
  • 1 cup fresh peaches, diced
  • 1/4 cup bourbon
  • 2 tablespoons honey
  • 1 tablespoon soy sauce
  • 1 tablespoon Dijon mustard
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your grill or oven broiler to medium-high heat. If using a grill, lightly oil the grates to prevent sticking.
  2. In a medium saucepan over medium heat, combine the diced peaches, bourbon, honey, soy sauce, Dijon mustard, garlic powder, and black pepper. Bring to a simmer and cook for about 5-7 minutes, stirring occasionally, until the peaches soften and the sauce thickens slightly. Remove from heat and let cool slightly.
