Ingredients
For the Chicken
- 2 tbsp olive oil
- 4 boneless, skinless chicken breasts
- 1 tsp garlic powder
- ½ tsp paprika
- ½ tsp salt (or to taste)
- ¼ tsp black pepper
For the Orzo & Sauce
- 1 cup orzo pasta
- 2 cups chicken broth
- ½ cup heavy cream
- 5.2 oz Boursin cheese (Garlic & Fine Herbs)
- 1 cup fresh spinach (chopped)
- ¼ cup Parmesan cheese (optional)
For Garnish
- Fresh parsley (optional)
Instructions
1. Season and Sear the Chicken
- Heat olive oil in a large skillet over medium heat.
- Season the chicken breasts with garlic powder, paprika, salt, and black pepper.
- Sear the chicken for 4-5 minutes per side, until golden brown and fully cooked.
- Remove the chicken from the skillet and set it aside.
2. Toast the Orzo
- In the same skillet, add the orzo and toast it for 1-2 minutes, stirring constantly.
- This step enhances the nutty flavor of the pasta.
3. Cook the Orzo in Chicken Broth
- Pour in the chicken broth and bring it to a simmer.
- Cover and let cook for 8-10 minutes, stirring occasionally, until the orzo is tender and has absorbed most of the liquid.
4. Make the Creamy Sauce
- Reduce the heat to low and stir in the heavy cream and Boursin cheese.
- Mix until the cheese is fully melted and creates a creamy sauce.
5. Add the Spinach
- Stir in the chopped spinach and cook for 1-2 minutes, until wilted.
6. Return the Chicken to the Skillet
- Place the cooked chicken back into the skillet and let it warm through.
7. Garnish and Serve
- Sprinkle with Parmesan cheese and fresh parsley, if desired.
- Serve immediately and enjoy!
Notes
- Toast the orzo before adding broth for a deeper flavor.
- For extra creaminess, add more Boursin or a splash of milk.
- Use chicken thighs instead of breasts for a juicier texture.
- If the sauce is too thick, loosen it with a bit of extra chicken broth.
- Add spice with red pepper flakes or cayenne for extra heat.
