Description

A delicious and hearty breakfast option, these Breakfast Burritos are filled with eggs, cheese, and your choice of chorizo or ham, wrapped in whole wheat tortillas.

Ingredients

  • 2 large whole wheat tortillas
  • 4 large eggs
  • 1/4 cup cream
  • 1 cup grated pepper jack cheese
  • 1/2 cup cooked and crumbled chorizo (or diced ham)
  • 1/2 cup chopped zucchini
  • 1/4 cup chopped green onions
  • Salt and pepper to taste
  • 1 tablespoon avocado oil
  • Guacamole (optional, for serving)
  • Hot sauce (optional, for serving)

Instructions

  1. In a bowl, beat the eggs with cream, salt, and pepper until frothy and well mixed.
  2. In a skillet, heat avocado oil over medium heat. Add the chopped green onions and zucchini, sautéing for about 3-4 minutes until they begin to soften.
  3. Stir in the chorizo (or ham) and cook for another 2 minutes until warmed through.
  4. Pour the egg mixture into the skillet, gently stirring as it cooks for about 5-7 minutes until the eggs are set.
  5. Remove from heat and fold in the grated pepper jack cheese until it melts into the mixture.
  6. Warm the whole wheat tortillas in a separate pan or microwave for about 15-20 seconds until they are soft and flexible.
  7. Spoon the egg and filling mixture onto each tortilla, then roll them up tightly, tucking in the edges as you go.
  8. Serve immediately with guacamole and a dash of hot sauce on the side, if you like.
