A delicious and hearty breakfast option, these Breakfast Burritos are filled with eggs, cheese, and your choice of chorizo or ham, wrapped in whole wheat tortillas.
Ingredients
- 2 large whole wheat tortillas
- 4 large eggs
- 1/4 cup cream
- 1 cup grated pepper jack cheese
- 1/2 cup cooked and crumbled chorizo (or diced ham)
- 1/2 cup chopped zucchini
- 1/4 cup chopped green onions
- Salt and pepper to taste
- 1 tablespoon avocado oil
- Guacamole (optional, for serving)
- Hot sauce (optional, for serving)
Instructions
- In a bowl, beat the eggs with cream, salt, and pepper until frothy and well mixed.
- In a skillet, heat avocado oil over medium heat. Add the chopped green onions and zucchini, sautéing for about 3-4 minutes until they begin to soften.
- Stir in the chorizo (or ham) and cook for another 2 minutes until warmed through.
- Pour the egg mixture into the skillet, gently stirring as it cooks for about 5-7 minutes until the eggs are set.
- Remove from heat and fold in the grated pepper jack cheese until it melts into the mixture.
- Warm the whole wheat tortillas in a separate pan or microwave for about 15-20 seconds until they are soft and flexible.
- Spoon the egg and filling mixture onto each tortilla, then roll them up tightly, tucking in the edges as you go.
- Serve immediately with guacamole and a dash of hot sauce on the side, if you like.
