A delicious and hearty Breakfast Club Sandwich that combines crispy bacon, fresh vegetables, and eggs, perfect for a satisfying breakfast.
Ingredients
- 8 slices of whole grain bread
- 8 ounces of cooked bacon
- 4 large eggs
- 1 cup of fresh spinach
- 1 medium tomato, sliced
- 4 slices of cheddar cheese
- 1 avocado, sliced
- Salt and pepper to taste
- Butter for toasting
Instructions
- Begin by cooking the bacon in a skillet over medium heat until crispy. Remove and place on paper towels to drain excess grease.
- In the same skillet, crack the eggs and cook them sunny-side up or to your desired doneness. Season with salt and pepper.
- While the eggs are cooking, toast the slices of bread in a separate pan with a little butter until golden brown.
- Assemble the sandwiches: On four slices of toasted bread, layer the following in order: a slice of cheddar cheese, a layer of spinach, two slices of bacon, a slice of tomato, an egg, and a few slices of avocado.
- Top each sandwich with another slice of toasted bread.
- If desired, cut each sandwich in half and secure with toothpicks for easier handling. Serve immediately.
Notes
- For a vegetarian option, substitute the bacon with sautéed mushrooms or tempeh.
- Add a spread of mayonnaise or a spicy aioli to enhance flavor.
