Ingredients

  • 8 slices of whole grain bread
  • 8 ounces of cooked bacon
  • 4 large eggs
  • 1 cup of fresh spinach
  • 1 medium tomato, sliced
  • 4 slices of cheddar cheese
  • 1 avocado, sliced
  • Salt and pepper to taste
  • Butter for toasting

Instructions

  1. Begin by cooking the bacon in a skillet over medium heat until crispy. Remove and place on paper towels to drain excess grease.
  2. In the same skillet, crack the eggs and cook them sunny-side up or to your desired doneness. Season with salt and pepper.
  3. While the eggs are cooking, toast the slices of bread in a separate pan with a little butter until golden brown.
  4. Assemble the sandwiches: On four slices of toasted bread, layer the following in order: a slice of cheddar cheese, a layer of spinach, two slices of bacon, a slice of tomato, an egg, and a few slices of avocado.
  5. Top each sandwich with another slice of toasted bread.
  6. If desired, cut each sandwich in half and secure with toothpicks for easier handling. Serve immediately.
