Ingredients
- 2 cups fresh broccoli florets, chopped
- 1 cup shredded cheddar cheese
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 2 large eggs
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil (for frying)
Instructions
- Steam the chopped broccoli florets for about 5 minutes until tender. Drain and let cool slightly.
- In a large mixing bowl, combine the steamed broccoli, cheddar cheese, breadcrumbs, Parmesan cheese, eggs, garlic powder, onion powder, salt, and black pepper. Mix until well combined.
- Form the mixture into small patties, about 2-3 inches in diameter.
- Heat olive oil in a large skillet over medium heat. Once hot, add the patties in batches, cooking for 3-4 minutes on each side until golden brown and crispy.
- Remove the patties from the skillet and place them on a paper towel-lined plate to absorb excess oil.
- Serve warm, garnished with additional cheese or a dollop of sour cream if desired.
Notes
- For a spicier kick, add 1/4 teaspoon of red pepper flakes to the mixture.
- Substitute the cheddar cheese with mozzarella or feta for a different flavor profile.
