Bruschetta Chicken is a flavorful and easy-to-make dinner recipe featuring seared chicken breasts topped with a fresh tomato and basil mixture, finished with melted mozzarella cheese.
Ingredients
- 2 boneless, skinless chicken breasts (about 1 pound)
- 1 cup cherry tomatoes, diced
- 1/4 cup fresh basil, chopped
- 1/4 cup balsamic vinegar
- 1/4 cup mozzarella cheese, shredded
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In a small bowl, combine the diced cherry tomatoes, chopped basil, minced garlic, balsamic vinegar, and a pinch of salt and pepper. Mix well and set aside to let the flavors meld.
- Heat the olive oil in a large oven-safe skillet over medium-high heat. Season the chicken breasts with salt and pepper on both sides.
- Once the skillet is hot, add the chicken breasts and sear for about 5-6 minutes on each side until golden brown.
- Pour the tomato mixture over the chicken in the skillet, then sprinkle the shredded mozzarella cheese on top.
- Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through (internal temperature should reach 165°F).
- Remove from the oven and let it rest for a few minutes before serving.
Notes
- For added flavor, marinate the chicken in olive oil, balsamic vinegar, and garlic for 30 minutes before cooking.
- You can substitute the mozzarella cheese with feta or goat cheese for a different taste.
