Description

Buffalo Chicken and Roasted Potato Casserole is a bold and flavorful dish that’s perfect for game days, family dinners, or any occasion. With crispy roasted potatoes, tender buffalo chicken, melted cheese, and savory toppings like bacon and green onions, this casserole is a guaranteed hit.

Ingredients

  • Cooking spray, for greasing
  • 6 tablespoons hot pepper sauce (e.g., Frank’s RedHot)
  • ⅓ cup olive oil
  • 2 tablespoons garlic powder
  • 1 tablespoon ground black pepper
  • 1 tablespoon paprika
  • 1 ½ teaspoons salt
  • 8 potatoes, cut into ½-inch cubes
  • 2 pounds skinless, boneless chicken breast halves, cubed
  • 2 cups shredded Mexican cheese blend
  • 1 cup cooked bacon, crumbled
  • 1 cup green onions, diced

Instructions

  1. Preheat Oven
Preheat your oven to 500°F (260°C) and grease a 9×13-inch baking dish with cooking spray.
  2. Prepare Buffalo Sauce
In a large skillet, heat the hot pepper sauce, olive oil, garlic powder, black pepper, paprika, and salt over low heat. Stir until well combined, then turn off the heat.
  3. Coat and Roast Potatoes
Toss the potato cubes in the buffalo sauce in batches, ensuring they’re evenly coated. Use a slotted spoon to transfer the potatoes to the prepared baking dish, leaving the remaining sauce in the skillet. Spread the potatoes evenly and roast for 45–50 minutes, stirring every 10–15 minutes, until crispy on the outside and tender inside.
  4. Marinate the Chicken
Mix the cubed chicken into the leftover buffalo sauce in the skillet and let it marinate while the potatoes roast.
  5. Lower Oven Temperature
Once the potatoes are done, reduce the oven temperature to 400°F (205°C).
  6. Assemble Casserole
Spread the marinated chicken evenly over the roasted potatoes. Top with shredded cheese, crumbled bacon, and diced green onions.
  7. Bake
Return the dish to the oven and bake for 15 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
  8. Serve
Let the casserole rest for a few minutes before serving. Enjoy hot, with your favorite side dishes or as a standalone meal.

Notes

  • Adjust Spice Level: Add more or less hot sauce to match your preferred heat level.
  • Cheese Alternatives: Use Cheddar, mozzarella, or your favorite cheese instead of the Mexican blend.
  • Make It Ahead: Assemble the casserole and refrigerate overnight. Bake before serving.
  • Leftover Tip: This dish reheats beautifully in the oven or microwave.
