Ingredients

  • 3 cups slow cooker pulled buffalo chicken
  • 4 ounces cream cheese
  • ¼ cup blue cheese dressing (plus extra for serving)
  • 2 tablespoons crumbled blue cheese (plus extra for serving)
  • ¼ cup Monterey Jack cheese, shredded
  • ¼ cup Fontina cheese, shredded
  • ¼ cup Gouda cheese, shredded
  • 1 tablespoon Franks RedHot Original Hot Sauce
  • 2 packages refrigerated Pillsbury Grands! Buttermilk Biscuits (8 biscuits per package)
  • 2 tablespoons butter, melted
  • 1 teaspoon kosher salt

Instructions

  • Prepare the Buffalo Chicken Mixture:
    • In a large mixing bowl, combine pulled buffalo chicken, cream cheese, blue cheese dressing, crumbled blue cheese, Monterey Jack, Fontina, Gouda, and Franks RedHot sauce.
    • Mix until all ingredients are evenly combined and creamy.
  • Prepare the Biscuits:
    • Preheat your oven to 375°F (190°C).
    • Open the biscuit packages and separate the dough into 16 pieces.
    • Flatten each biscuit into a ¼-inch-thick circle using your hands or a rolling pin.
  • Fill and Seal the Bombs:
    • Place 2 tablespoons of the buffalo chicken mixture in the center of each flattened biscuit.
    • Pull the edges of the dough up and over the filling, pinching to seal tightly.
    • Place each bomb seam-side down on a parchment-lined baking sheet.
  • Add Finishing Touches:
    • Brush the tops of the bombs with melted butter.
    • Sprinkle evenly with kosher salt for added flavor.
  • Bake:
    • Bake for 15-20 minutes or until the bombs are golden brown and cooked through.
    • Remove from the oven and let cool slightly before serving.
  • Serve:
    • Arrange the Buffalo Chicken Bombs on a platter.
    • Serve warm with extra blue cheese dressing, ranch, or additional hot sauce on the side for dipping.

Notes

  • Make-Ahead Option: Assemble the bombs and refrigerate them for up to 24 hours before baking.
  • Freezing Instructions: To freeze, assemble the bombs, then freeze them unbaked on a baking sheet. Once frozen, transfer to a freezer-safe container. Bake from frozen, adding a few extra minutes to the cooking time.
  • Cheese Substitutions: Feel free to substitute your favorite cheeses, like cheddar or mozzarella, for a personal twist.
