Description

Take your comfort food game up a notch with this Buffalo Chicken Grilled Cheese Sandwich! Loaded with spicy buffalo chicken, gooey melted cheese, and grilled to golden perfection, this sandwich is perfect for lunch, dinner, or a savory snack. Ingredients

  • 2 cups cooked shredded chicken (rotisserie or leftover works great)

  • 1/2 cup buffalo sauce

  • 4 slices cheddar cheese (or cheese of choice)

  • 4 slices bread (sourdough, whole wheat, or preferred type)

  • 2 tablespoons butter

  • 1/4 cup blue cheese crumbles (optional)

  • 1/4 cup ranch dressing (for dipping, optional)


Instructions

  • Prepare the Chicken
    In a medium bowl, combine the shredded chicken with the buffalo sauce. Mix until evenly coated.

  • Assemble the Sandwiches
    Lay out the bread slices. On two slices, place one slice of cheddar cheese each. Add the buffalo chicken mixture evenly, then top with blue cheese crumbles if using. Add another slice of cheddar on top of the chicken and close the sandwiches with the remaining bread slices.

  • Grill the Sandwiches
    Heat a skillet over medium heat. Spread 1 tablespoon of butter in the pan. Place the sandwiches in the skillet and cook for 3–4 minutes per side, until the bread is golden brown and crispy and the cheese is melted. Add more butter as needed when flipping.

 

  • Serve
    Let the sandwiches rest for 1–2 minutes before slicing. Serve warm with ranch or blue cheese dressing for dipping, and enjoy!
