Ingredients
- 1 (16-ounce) package elbow macaroni
- 1 rotisserie-roasted chicken, shredded
- 6 tablespoons butter
- 6 tablespoons all-purpose flour
- 3 cups milk
- 1 pinch ground black pepper
- 2 cups shredded Cheddar cheese
- 2 cups shredded Monterey Jack cheese
- ½ cup hot sauce (e.g., Frank’s® RedHot®), or more to taste
- ½ cup crumbled Gorgonzola cheese
Instructions
- Cook the Pasta: Bring a large pot of salted water to a boil. Cook the macaroni until al dente, about 8 minutes. Drain and set aside.
- Prepare the Chicken: Remove the skin and bones from the rotisserie chicken. Shred the meat into bite-sized pieces. Set aside.
- Make the Roux: In a large Dutch oven, melt the butter over medium heat. Gradually whisk in the flour to create a roux. Cook for 1 minute, stirring constantly, until golden.
- Create the Cheese Sauce: Slowly pour in the milk while whisking until smooth. Continue to stir and cook for about 5 minutes, or until the sauce thickens. Season with a pinch of black pepper.
- Melt the Cheese: Reduce the heat and stir in the shredded Cheddar and Monterey Jack cheeses. Mix until fully melted and creamy.
- Add the Buffalo Flavor: Pour in the hot sauce and stir well. Adjust the amount of hot sauce based on your spice preference.
- Combine All Ingredients: Add the cooked macaroni, shredded chicken, and crumbled Gorgonzola cheese to the sauce. Stir until everything is evenly coated.
- Serve: Spoon the Buffalo Chicken Mac and Cheese into bowls. Garnish with additional Gorgonzola, a drizzle of hot sauce, or freshly chopped parsley if desired. Serve immediately.
