Description

Buffalo Chicken Mac and Cheese combines creamy, cheesy mac and cheese with the bold, spicy flavors of buffalo chicken. Perfect for game days, family dinners, or whenever you’re craving a comforting, indulgent meal with a kick!

Ingredients

  • 1 (16-ounce) package elbow macaroni
  • 1 rotisserie-roasted chicken, shredded
  • 6 tablespoons butter
  • 6 tablespoons all-purpose flour
  • 3 cups milk
  • 1 pinch ground black pepper
  • 2 cups shredded Cheddar cheese
  • 2 cups shredded Monterey Jack cheese
  • ½ cup hot sauce (e.g., Frank’s® RedHot®), or more to taste
  • ½ cup crumbled Gorgonzola cheese

Instructions

  • Cook the Pasta: Bring a large pot of salted water to a boil. Cook the macaroni until al dente, about 8 minutes. Drain and set aside.
  • Prepare the Chicken: Remove the skin and bones from the rotisserie chicken. Shred the meat into bite-sized pieces. Set aside.
  • Make the Roux: In a large Dutch oven, melt the butter over medium heat. Gradually whisk in the flour to create a roux. Cook for 1 minute, stirring constantly, until golden.
  • Create the Cheese Sauce: Slowly pour in the milk while whisking until smooth. Continue to stir and cook for about 5 minutes, or until the sauce thickens. Season with a pinch of black pepper.
  • Melt the Cheese: Reduce the heat and stir in the shredded Cheddar and Monterey Jack cheeses. Mix until fully melted and creamy.
  • Add the Buffalo Flavor: Pour in the hot sauce and stir well. Adjust the amount of hot sauce based on your spice preference.
  • Combine All Ingredients: Add the cooked macaroni, shredded chicken, and crumbled Gorgonzola cheese to the sauce. Stir until everything is evenly coated.
  • Serve: Spoon the Buffalo Chicken Mac and Cheese into bowls. Garnish with additional Gorgonzola, a drizzle of hot sauce, or freshly chopped parsley if desired. Serve immediately.

Notes

  • Adjust Spice Level: Use less hot sauce or substitute with a milder sauce for a kid-friendly version.
  • Add Crunch: Sprinkle breadcrumbs on top and broil for 2–3 minutes for a crispy topping.
  • Cheese Variations: Try Gouda, Colby Jack, or sharp Cheddar for a different flavor profile.
  • Storage: Store leftovers in the refrigerator for up to 3 days or freeze for up to 3 months.
