Ingredients

  • 1 pound pork tenderloin, thinly sliced
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon sesame oil
  • 1 tablespoon minced garlic
  • 1 tablespoon minced ginger
  • 1 tablespoon rice vinegar
  • 1/2 teaspoon black pepper
  • 2 tablespoons vegetable oil
  • 8 ounces udon noodles
  • 1 cup sliced mushrooms
  • 1 cup sliced bell peppers (any color)
  • 1 cup sliced green onions
  • 1 tablespoon sesame seeds (for garnish)

Instructions

  1. In a bowl, combine the soy sauce, brown sugar, sesame oil, minced garlic, minced ginger, rice vinegar, and black pepper.
  2. Add the sliced pork to the marinade, ensuring all pieces are coated. Let it marinate for at least 30 minutes, or up to 2 hours in the refrigerator for more flavor.
  3. Cook the udon noodles according to package instructions. Drain and set aside.
  4. In a large skillet or wok, heat the vegetable oil over medium-high heat.
  5. Add the marinated pork (discard any leftover marinade) and stir-fry for about 5-7 minutes, or until the pork is cooked through and slightly caramelized.
  6. Add the sliced mushrooms and bell peppers to the skillet. Stir-fry for an additional 3-4 minutes until the vegetables are tender.
  7. Add the cooked udon noodles to the skillet and toss everything together until well combined and heated through.
  8. Stir in the sliced green onions.
  9. Serve immediately, garnished with sesame seeds.

  • For a spicier version, add a teaspoon of gochujang (Korean chili paste) to the marinade.
