Ingredients
For the Sugar Cookies:

- 1½ teaspoons vanilla extract
- Food coloring (optional)
For the Buttercream Filling:
- 6 sticks unsalted butter, softened
- 9 cups confectioners’ sugar
- 1½ teaspoons vanilla extract
Instructions
- Prepare the Cookie Dough: In a bowl, whisk together flour, baking soda, baking powder, and salt. In another bowl, beat butter and sugar until fluffy. Add egg and vanilla extract, mixing well. Slowly incorporate the dry ingredients.
- Bake the Cookies: Divide dough and mix in food coloring if desired. Roll into balls, place on a baking sheet, and bake at 350°F (175°C) for 8-10 minutes. Let cool completely.
- Make the Buttercream: Beat butter and 3 cups of sugar together, then gradually add the remaining sugar. Mix in vanilla extract and beat until fluffy.
- Assemble the Sandwiches: Pipe or spread buttercream onto the flat side of a cookie and top with another to create a sandwich.
