Description

This Cajun Sausage and Rice Skillet is a bold and flavorful one-pan meal packed with smoky sausage, vibrant spices, and perfectly seasoned rice. It’s an easy, hearty dish perfect for busy weeknights or meal prep.

Ingredients

  • 12 oz smoked sausage (Andouille or Kielbasa, sliced into 1/2-inch rounds)
  • 1 cup long-grain white rice (rinsed)
  • 1 red bell pepper (diced)
  • 1 green bell pepper (diced)
  • 1 medium onion (diced)
  • 3 cloves garlic (minced)
  • 1 1/2 cups chicken broth
  • 2 tbsp Cajun seasoning
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Fresh parsley (optional, for garnish)
  • Green onions (optional, for garnish)
  • Hot sauce (optional, for serving)

Instructions

  1. Prepare Ingredients: Slice the sausage, dice the bell peppers and onion, and mince the garlic. Rinse the rice under cold water until the water runs clear.
  2. Cook the Sausage: Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the sliced sausage and cook for 5-7 minutes until browned and crispy. Remove and set aside.
  3. Sauté the Veggies: Add the diced onion and bell peppers to the same skillet. Cook for about 3 minutes until softened, then add the garlic and cook for another minute.
  4. Toast the Rice: Stir the rinsed rice into the skillet with the vegetables. Let it toast for about 2 minutes until slightly fragrant.
  5. Cook the Rice: Pour in the chicken broth and Cajun seasoning. Stir well, bring the mixture to a boil, then reduce heat to low. Cover and let it simmer for 15-20 minutes until the rice is tender and liquid is absorbed.
  6. Combine and Finish: Return the cooked sausage to the skillet, stir everything together, and let it cook for another 3-5 minutes to blend the flavors.
  7. Serve: Garnish with chopped parsley, green onions, and a drizzle of hot sauce if desired.

Notes

  • Sausage Choice: Andouille sausage gives the most authentic Cajun flavor, but Kielbasa or turkey sausage are great alternatives.
  • Rice Tip: Toasting the rice before cooking enhances its flavor and prevents it from becoming mushy.
  • Adjust Spice Level: Add more Cajun seasoning, cayenne, or hot sauce for extra heat.
  • Storage: Store leftovers in an airtight container in the refrigerator for up to 3-4 days or freeze for up to 2 months.
