Description

This one-pan Cajun Sausage Vegetable Skillet is a bold, flavorful, and quick dinner solution perfect for busy weeknights. Packed with smoked sausage, colorful veggies, and Cajun spices, it’s a wholesome and hearty dish that’s ready in 30 minutes with minimal cleanup!


Ingredients

  • 1 pound smoked sausage, sliced into 1/4-inch rounds

  • 1 tablespoon olive oil

  • 1 medium onion, diced

  • 1 bell pepper, diced (any color)

  • 2 cloves garlic, minced

  • 2 medium zucchini, sliced into rounds

  • 1 cup cherry tomatoes, halved

  • 1 teaspoon Cajun seasoning (adjust to taste)

  • Salt and pepper, to taste

  • Fresh parsley, chopped (for garnish)


Instructions

  • Heat the Oil
    In a large skillet, heat the olive oil over medium heat.

  • Cook the Sausage
    Add the sliced smoked sausage to the skillet. Cook for 5–7 minutes, stirring occasionally, until browned.

  • Sauté the Aromatics
    Add the diced onion and bell pepper to the skillet. Sauté for 3–4 minutes until softened.

  • Add Garlic and Veggies
    Stir in the minced garlic and cook for 1 minute. Add the zucchini and cherry tomatoes and mix well.

  • Season and Simmer
    Sprinkle in the Cajun seasoning, salt, and pepper. Stir to coat all the ingredients. Cook for an additional 5–7 minutes, stirring occasionally, until vegetables are tender.

 

  • Serve
    Remove from heat, garnish with chopped parsley, and serve warm.

Notes

  • For a vegetarian version, swap sausage with tofu or meatless sausage.
