1 pound smoked sausage, sliced into 1/4-inch rounds

2 medium zucchini, sliced into rounds

1 cup cherry tomatoes, halved

1 teaspoon Cajun seasoning (adjust to taste)

Instructions

Heat the Oil
In a large skillet, heat the olive oil over medium heat. -
Cook the Sausage
Add the sliced smoked sausage to the skillet. Cook for 5–7 minutes, stirring occasionally, until browned. -
Sauté the Aromatics
Add the diced onion and bell pepper to the skillet. Sauté for 3–4 minutes until softened. -
Add Garlic and Veggies
Stir in the minced garlic and cook for 1 minute. Add the zucchini and cherry tomatoes and mix well. -
Season and Simmer
Sprinkle in the Cajun seasoning, salt, and pepper. Stir to coat all the ingredients. Cook for an additional 5–7 minutes, stirring occasionally, until vegetables are tender.
