Description

Take the warm, spiced flavors of classic carrot cake and transform them into adorable, bite-sized Carrot Cake Pops! These festive treats are coated in smooth orange candy melts and decorated to resemble tiny carrots—making them perfect for Easter, springtime gatherings, or just for fun. Whether you’re a cake pop pro or trying them for the first time, this easy recipe will bring joy to your dessert table!

Ingredients

  • 1 baked yellow or carrot cake, crumbled
  • 1 cup frosting (cream cheese or vanilla)
  • 12 oz orange candy melts, melted
  • Teardrop-shaped green candies (for leaves)
  • Americolor Gourmet Writing Pen (for drawing faces, optional)
  • White candy coating (for eye highlights, optional)
  • Pink confetti sprinkles (for rosy cheeks, optional)

Instructions

Step 1: Make the Cake Pop Dough

  1. In a large bowl, crumble the baked cake into fine crumbs.
  2. Mix in the frosting until the mixture reaches a dough-like consistency.

Step 2: Shape the Carrots

  1. Roll the cake mixture into small, slightly tapered carrot shapes.
  2. Place them on a wax paper-lined baking sheet and refrigerate for 30 minutes to firm up.

Step 3: Dip in Candy Coating

  1. Melt the orange candy melts in a microwave-safe bowl according to package instructions.
  2. Insert a lollipop stick into each carrot-shaped cake ball and dip them into the melted candy coating, ensuring full coverage.
  3. Let the excess coating drip off before placing them back on the wax paper.

Step 4: Decorate the Carrots

  1. Before the coating sets, insert three teardrop-shaped green candies at the top to resemble carrot leaves.
  2. If desired, use the writing pen to draw faces, add white candy coating dots for eye highlights, and attach pink confetti sprinkles for rosy cheeks.
  3. Use a toothpick to lightly create fine carrot texture lines in the coating before it hardens.

Step 5: Set and Serve

  1. Let the cake pops set completely at room temperature or refrigerate for 10-15 minutes to speed up the process.
  2. Serve and enjoy your adorable Carrot Cake Pops!
