Description

These Cauliflower Cottage Cheese Tots are a crispy, protein-packed twist on classic tater tots—without the extra carbs! Baked to golden perfection, they’re light and fluffy on the inside with a satisfying crunch on the outside. Perfect as a healthy snack, side dish, or appetizer, these tots are easy to make, kid-friendly, and loaded with flavor.

Ingredients

Base:

  • 1 head cauliflower, steamed and mashed
  • 1 cup plain cottage cheese

Binding & Seasoning:

  • ½ cup bread crumbs (or almond flour for keto)
  • ½ cup grated parmesan cheese
  • 1 egg
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ cup chopped scallions

Instructions

  1. Prepare the Cauliflower
    • Steam or boil cauliflower florets until tender, then drain well and let cool.
    • Mash until smooth, removing as much moisture as possible with a clean towel.
  2. Mix the Ingredients
    • In a bowl, combine mashed cauliflower, cottage cheese, breadcrumbs, egg, parmesan, and seasonings.
    • Stir until well mixed and form into small tot-sized shapes.
  3. Bake the Tots
    • Preheat oven to 400°F (200°C).
    • Arrange tots on a parchment-lined baking sheet or wire rack for extra crispiness.
    • Bake for 20-25 minutes, flipping halfway through, until golden brown and crispy.
  4. Serve & Enjoy
    • Let cool slightly before serving with your favorite dipping sauces like ranch, marinara, or honey mustard.

Notes

  • For crispier tots, bake on a wire rack or lightly spray with oil before baking.
  • For extra flavor, mix in shredded cheddar, smoked paprika, or chopped jalapeños.
  • For meal prep, refrigerate for 3 days or freeze for up to 3 months.
  • For an air fryer option, cook at 375°F (190°C) for 12-15 minutes, shaking halfway.
