Ingredients
Base:
- 1 head cauliflower, steamed and mashed
- 1 cup plain cottage cheese
Binding & Seasoning:
- ½ cup bread crumbs (or almond flour for keto)
- ½ cup grated parmesan cheese
- 1 egg
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ¼ cup chopped scallions
Instructions
- Prepare the Cauliflower
- Steam or boil cauliflower florets until tender, then drain well and let cool.
- Mash until smooth, removing as much moisture as possible with a clean towel.
- Mix the Ingredients
- In a bowl, combine mashed cauliflower, cottage cheese, breadcrumbs, egg, parmesan, and seasonings.
- Stir until well mixed and form into small tot-sized shapes.
- Bake the Tots
- Preheat oven to 400°F (200°C).
- Arrange tots on a parchment-lined baking sheet or wire rack for extra crispiness.
- Bake for 20-25 minutes, flipping halfway through, until golden brown and crispy.
