Ingredients

For the Crust:

  • 2 medium cauliflower heads, florets only
  • ½ cup shredded mozzarella cheese
  • ¼ cup shredded Parmesan cheese
  • ⅛ teaspoon salt
  • ½ teaspoon black pepper
  • 1½ teaspoons dried herbs (thyme, oregano, or basil)
  • 1 large egg

For the Toppings:

  • Pizza sauce (as desired)
  • Shredded mozzarella cheese (as desired)
  • Assorted pizza toppings (pepperoni, veggies, olives, etc.)

Instructions

  • Prepare the Cauliflower:
    • Wash and cut the cauliflower into florets.
    • Pulse the florets in a food processor until they resemble fine rice.
  • Cook the Cauliflower Rice:
    • Microwave the cauliflower rice in a large bowl for 3–8 minutes, stirring occasionally, until tender.
    • Let it cool, then place the cooked cauliflower in a clean kitchen towel or cheesecloth and squeeze out as much water as possible.
  • Make the Dough:
    • Combine the cauliflower, mozzarella, Parmesan, salt, pepper, herbs, and egg in a bowl. Mix until a dough-like consistency forms.
  • Shape the Crust:
    • Preheat the oven to 400°F (200°C).
    • Line a baking sheet with parchment paper. Spread the cauliflower dough into a 10–11 inch circle, about ¼ inch thick.
  • Bake the Crust:
    • Bake for 20 minutes. Flip the crust carefully and bake for another 5–10 minutes until golden and firm.
  • Add Toppings:
    • Spread pizza sauce over the baked crust.
    • Sprinkle shredded mozzarella and add your favorite toppings.
  • Finish Baking:
    • Bake at 450°F (230°C) for 5–7 minutes, or until the cheese is melted and bubbly. Use the broiler for 2 minutes for extra crispiness.
  • Serve:
    • Slice and enjoy your healthier pizza with your favorite sides or salad.
