A healthier, low-carb, and gluten-free alternative to traditional pizza dough. This cauliflower pizza crust is crispy, flavorful, and the perfect base for all your favorite toppings.
Ingredients
For the Crust:
- 2 medium cauliflower heads, florets only
- ½ cup shredded mozzarella cheese
- ¼ cup shredded Parmesan cheese
- ⅛ teaspoon salt
- ½ teaspoon black pepper
- 1½ teaspoons dried herbs (thyme, oregano, or basil)
- 1 large egg
For the Toppings:
- Pizza sauce (as desired)
- Shredded mozzarella cheese (as desired)
- Assorted pizza toppings (pepperoni, veggies, olives, etc.)
Instructions
- Prepare the Cauliflower:
- Wash and cut the cauliflower into florets.
- Pulse the florets in a food processor until they resemble fine rice.
- Cook the Cauliflower Rice:
- Microwave the cauliflower rice in a large bowl for 3–8 minutes, stirring occasionally, until tender.
- Let it cool, then place the cooked cauliflower in a clean kitchen towel or cheesecloth and squeeze out as much water as possible.
- Make the Dough:
- Combine the cauliflower, mozzarella, Parmesan, salt, pepper, herbs, and egg in a bowl. Mix until a dough-like consistency forms.
- Shape the Crust:
- Preheat the oven to 400°F (200°C).
- Line a baking sheet with parchment paper. Spread the cauliflower dough into a 10–11 inch circle, about ¼ inch thick.
- Bake the Crust:
- Bake for 20 minutes. Flip the crust carefully and bake for another 5–10 minutes until golden and firm.
- Add Toppings:
- Spread pizza sauce over the baked crust.
- Sprinkle shredded mozzarella and add your favorite toppings.
- Finish Baking:
- Bake at 450°F (230°C) for 5–7 minutes, or until the cheese is melted and bubbly. Use the broiler for 2 minutes for extra crispiness.
- Serve:
- Slice and enjoy your healthier pizza with your favorite sides or salad.
Notes
- Water Removal: Squeeze the cauliflower thoroughly to avoid a soggy crust.
- Topping Customization: Add any toppings, but avoid heavy ones that might weigh down the crust.
- Storage: Freeze the crust after baking (without toppings) for up to 1 month.
