Description

Char Siu Chicken is a flavorful, juicy, and caramelized dish inspired by traditional Cantonese Char Siu pork. Infused with a rich marinade of hoisin sauce, honey, soy sauce, and aromatic five-spice, this dish delivers deep umami flavors with a glossy glaze. Whether roasted in the oven or grilled for a smoky touch, Char Siu Chicken is a perfect addition to any meal.

Ingredients

For the Marinade:

  • 2 pounds boneless, skinless chicken thighs or breasts
  • 3 tablespoons hoisin sauce
  • 2 tablespoons soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon Shaoxing wine (or dry sherry)
  • 1 tablespoon honey
  • 1 tablespoon brown sugar
  • 1 tablespoon ketchup
  • 1 teaspoon five-spice powder
  • 1 teaspoon sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger
  • ½ teaspoon red food coloring (optional, for classic red hue)

For the Basting Glaze:

  • 2 tablespoons honey or maltose
  • 1 tablespoon warm water

Instructions

  1. Marinate for Maximum Flavor:
    • In a mixing bowl, whisk together all marinade ingredients.
    • Place the chicken in a ziplock bag or shallow dish, pour the marinade over, and coat well.
    • Cover and refrigerate for at least 4 hours (overnight for the best depth of flavor).
  2. Choose Your Cooking Method:

    Oven Roasting:

    • Preheat oven to 400°F (200°C).
    • Line a baking sheet with foil and place a wire rack on top.
    • Arrange the marinated chicken on the rack and roast for 25-30 minutes, flipping halfway.
    • Mix honey with warm water and brush over the chicken in the last 5 minutes of roasting.
    • Turn on the broiler for 2-3 minutes for slightly charred edges.

    Grilling:

    • Preheat the grill to medium heat (375°F/190°C).
    • Grill the chicken for 5-7 minutes per side, basting with the honey glaze.
    • Increase heat to high and grill for 1-2 more minutes per side for a perfect char.

Notes

  1. Marinate Overnight for Maximum Flavor – The longer the marination, the deeper the flavor.
  2. Get That Signature Char – Broil or grill at high heat for the last few minutes for caramelized edges.
  3. Use Chicken Thighs for Juiciness – Thighs absorb the marinade better and remain tender after cooking.
  4. Double Baste for Extra Shine – Apply a final honey glaze for that glossy, sticky texture.
