Ingredients

  • 2 cups cooked seafood mix (shrimp, crab, and scallops)
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 1 cup heavy cream
  • 1 cup chicken or seafood broth
  • 1/2 cup diced onion
  • 1/4 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon Old Bay seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 package (8.5 oz) Cheddar Bay Biscuit mix
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup water

Instructions

  1. Preheat your oven to 400°F (200°C). In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
  2. Stir in the flour, garlic powder, Old Bay seasoning, salt, and black pepper. Cook for 1-2 minutes until the mixture is bubbly.
  3. Gradually whisk in the heavy cream and broth, stirring constantly until the mixture thickens, about 3-5 minutes.
  4. Add the cooked seafood and frozen mixed vegetables to the skillet, stirring to combine. Remove from heat and pour the mixture into a 9-inch pie dish or oven-safe skillet.
  5. In a separate bowl, prepare the Cheddar Bay Biscuit mix according to package instructions, adding the shredded cheddar cheese and water. Mix until just combined.
  6. Drop spoonfuls of the biscuit dough over the seafood mixture, covering it as evenly as possible.
  7. Bake in the preheated oven for 20-25 minutes, or until the biscuits are golden brown and cooked through.
